If you’ve ever been to the Magic Kingdom at Disney World you may have had a Dole Pineapple Whip. It’s one of those things that you won’t find anywhere but at Disney. It’s so refreshing, a slushy whipped frozen pineapple with pineapple juice pooled around the bottom. I took my version a step further and ran it through the ice cream maker to make it more like the texture of a sorbet. Either way it’s delicious!!
You’ll need 1 large pineapple, pineapple juice, sugar and some evaporated milk.
Peel, core and cut the pineapple into chunks. You’ll need approximately 2 pounds of pineapple chunks. Freeze for several hours or overnight. Place the pineapple chunks into your blender.
Pour 1 cup of pineapple juice in with the pineapple chunks.
And 1 cup of the evaporated milk.
And last but not least add 2 – 4 tablespoons of sugar. Taste your pineapple for sweetness. If your pineapple is fairly sweet you may not need as much sugar but if it’s a tart pineapple you may want to add more sugar to get the taste you are looking for.
If the pineapple chunks are frozen solid it may be hard to blend. I used the “ice crush” option on the blender to make it easier to blend.
You could pour this straight into a glass and it would be the tastiest smoothie ever.
Or you could pour it into an ice cream maker and make it a little more like a sorbet texture. Pour some pineapple juice over the frozen whip and make sure to spoon some of the juice into every bite. Once you freeze the remaining whip it hardens to the point that it is hard to scoop out. You will need to let it thaw partially to get that sorbet like texture back.
Frozen Pineapple Whip
1 large Pineapple, peeled, cored and cut into chunks (approx 2 pounds)
1 cup Pineapple Juice (I used a frozen concentrate)
1 cup Evaporated Whole Milk
2 – 4 tablespoons Sugar, or more to taste
Peel core and cut pineapple into chunks. Place chunks in a freezer safe container and freeze completely (several hours or overnight). When ready, place frozen pineapple chunks into a blender. Add pineapple juice, evaporated milk and sugar. Use the “ice crush” option on your blender to blend the frozen pineapple into a slushy whip. To freeze, pour the frozen pineapple slush into an ice cream maker and freeze according to manufacturer instructions. Scoop frozen whip into an ice cream bowl and pour some pineapple juice over top.
Note: When the pineapple whip is frozen solid it is too hard to scoop. Thaw for several minutes in order to soften the whip enough to scoop.
Makes approx 2 quarts.
