    Everywhere I turn I see recipes combining dark chocolate and sea salt.  My hubby Joe loves dark chocolate and pretzels so I decided to bake up some of these trendy cookies and see what all the fuss was about.   It’s hard to describe but you get a bite of sweet and then a bite of crunchy saltiness chasing behind.  I kept thinking it was that it was like the first time I sipped a sweet margarita in a salty rimmed glass.  If you like sweet and salty things, this is the cookie for you.

    I took a basic cookie dough recipe and added the pretzels, dark chocolate chips, cocoa and some peanut butter.


    I started by creaming together the butter and sugars.  I used 2 sticks of butter, 1 cup white sugar and 1 cup brown sugar.


    Add 2 eggs and 1 tablespoon vanilla and beat on low until well blended.


    I added 1/2 cup of peanut butter to the mix because it sounded good.


    In another bowl stir together the dry ingredients of flour, cocoa powder, baking soda and a pinch of salt.  While the mixer is on low, add the dry ingredients until they are all incorporated.


    Once your cookie dough is ready, add the crushed pretzel pieces and dark chocolate chips.


    I used an ice cream scooper to form the dough.  Place on an ungreased cookie sheet or baking pan.


    I used a glass to press down the cookie dough.


    Lightly sprinkle a bit of sea salt over each cookie.  Bake in a 350 degree oven for 9 – 10 minutes.


    Cool the cookies on a wire rack for a few minutes before serving.  Joe liked the cookies with the big chunks of pretzel best.

    Dark Chocolate Pretzel Cookies with Sea Salt

    1 cup Unsalted Butter, softened
    1 cup White Sugar
    1 cup Brown Sugar, firmly packed
    2 Eggs
    1 tablespoon Vanilla Extract
    1/2 cup Peanut Butter, chunky
    1 3/4 cups All Purpose Flour
    1 1/4 cups Cocoa Powder
    2 teaspoons Baking Soda
    dash of Salt
    3/4 cup Dark Chocolate Chips
    1 cup Pretzels, crushed
    Sea Salt, coarse

    Preheat oven to 350 degrees.  In a mixing bowl, combine butter and sugars. Cream together and beat in the eggs and vanilla.  Add peanut butter and mix until well blended.  Combine the flour, cocoa powder, baking soda and salt.  Add to the creamed mixture and mix until well blended.  Fold in dark chocolate chips and pretzel bits.

    Using an ice cream scoop, drop cookie dough onto ungreased cookie sheet or baking pan.   Press dough down slightly to make a small disc and sprinkle coarse sea salt over top.  Bake for 9 – 10 minutes.  Cool cookies on a wire rack.

    Makes 3 1/2 – 4 dozen cookies
