    What to do with the leftover rib rub and barbecue sauce?  Here’s one idea, make a barbecued chicken pizza.  California Pizza Kitchen made it famous but they aren’t the only ones who can make a tasty pizza.  I had leftover flatbreads that would make a yummy pizza topped with barbecue sauce, fresh mozzarella slices, seasoned barbecue chicken, some red onion slices and cilantro thrown over the top just to make it pretty.  It doesn’t matter whether you have leftovers from scratch or store bought, you can put this pizza together in no time and it will taste fantastic because you made it.

    I’m making 2 pizza’s and only need about 1/2 chicken thigh to go on each pizza.  You could use chicken breast if you want, it doesn’t matter.  So I have 1 chicken thigh and I’m going to sprinkle the bbq rub pretty generously over both sides, drizzle with olive oil and put into a 425 degree oven for 25 – 30 minutes.


    It comes out nice and browned on the outside and juicy on the inside.  Let it rest for a few minutes.


    Take a flatbread and lightly mop some bbq sauce over top, just the way you would with pizza sauce.


    You want a light amount of sauce, otherwise it tends to run over the edges.


    Start topping, first with cheese and then some cut up bbq chicken.  I always have fresh mozzarella on hand because we make a lot of pizza but regular grated mozzarella will work fine here too.


    Next comes some red onion slices.


    Before I pop this into the oven I dripped a little bbq sauce over the top and drizzled with olive oil.


    My oven is set at 425 degrees and on a pizza stone cooks for 8 – 9 minutes.  You can use a cookie sheet or any baking pan as well.  The main thing is to look at your pizza after about 8 minutes to check on how the cheese is melting, if the crust is crisp and if the onions are starting to soften.


    This is how I like it.  And if you have some cilantro or parsley or green onion to chop and sprinkle over top it makes for a pretty pizza.


    Pretty good leftovers huh!


    Barbecue Chicken Pizza

    1 Chicken Thigh, boneless and skinless
    Barbecue Rub Seasoning , homemade or store bought
    2 (8 inch) Flatbreads, homemade or store bought
    8 ounces Fresh Mozzarella Cheese
    Barbecue Sauce , homemade or store bought
    Red Onion Slices
    Cilantro, Parsley, or Green Onion Tops, optional
    Olive Oil

    Sprinkle barbecue rub seasoning over both sides of the chicken and bake in a 425 degree oven for 25 – 30 minutes.  Let rest for a few minutes.

    Assemble pizza.  Lightly mop barbecue sauce over flatbread leaving a half inch barrier around the edges without sauce.  Top  with fresh mozzarella slices, sliced chicken pieces and red onion slices.  Drizzle some barbecue sauce and olive oil over top.  Bake in 425 degree oven on a pizza stone or other baking pan for 8 – 9 minutes or until cheese has melted and flatbread crust is crisp.

    Top with Cilantro, Parsley or Green Onion tops if desired.

    Makes 2 pizzas
