    I am not shy about how much I love sorbets.  Sorbets are so refreshing and take little time out of your day to make.  I’ve been a little obsessive lately trying different fruity combinations and this is definitely one of the best!!  I am partial to citrus flavors and the fusion of grapefruit, lime and margarita is hard to beat.  Joe and I kept stopping by the freezer for “just a taste” and it was gone in no time.  So I made a smaller batch and poured into popsicle molds to see how they would freeze.  It was like a frozen margarita on a stick, a fun adult treat that we will be enjoying a lot this summer!

    To make a full batch of sorbet you’ll need 4 – 5 large grapefruit, 2 – 3 limes, water, sugar and to make it adult friendly, a little pre-mixed margarita.

    To get started, add the sugar and water into a medium sized saucepan over medium low heat. Stir the pot to make a simple syrup mix.

    Zest 2 grapefuit and 2 limes and add to the syrup mix.

    Bring to a simmer and stir for a couple minutes more.  Remove from heat and let cool.

    Begin adding the liquids together.  Add the juice from the grapefruit, limes and the simple syrup mix.

    And for the adult version, add 1/2 cup of pre-mixed margarita.

    Love the color! The grapefruit were brighter pink but the lime juice toned it down a bit to a pale shade of pink.  At this point, you can pour into your ice cream freezer to make sorbet or pour into molds for popsicles.  Another option would to make a granita and pour into a shallow pan and freeze.  As it begins to freeze, use a fork to break up the crystals after about 30 minutes. Place back in the freezer and  continue to break up the crystals every 30 minutes for approximately 1 1/2 hours.

    Grapefruit Margarita Sorbet (adapted from She Wears Many Hats)

    4 – 5 large Grapefruit, about 3 cups juice
    2 – 3 large Limes, about 1/2 cup juice
    Zest from 2 Grapefruit
    Zest from 2 Limes
    2 cups Water
    1 1/4 cups Sugar
    1/2 cup Margarita, pre-mixed

    Heat a heavy bottomed saucepan over medium low heat.  Add the water, sugar and zest to the pan and bring to a simmer.  Stir the syrup for 2 minutes.  Remove from heat and let syrup cool.

    Combine the grapefruit and lime juice, simple syrup and pre-mixed margarita.  Pour into an ice cream maker and freeze according to manufacturers instructions.

    **For Popsicles, halve the recipe and pour into popsicle molds and freeze.
