      As a summertime treat, ice cream is hard to beat.  And anytime you have a slice of fruit pie or cobbler, a scoop of Vanilla Ice Cream can’t be far behind, at least I think so.  I love this recipe, adapted from “David Lebovitz Living the Sweet Life in Paris”.   With so many flavors of ice cream to choose from  you might think vanilla to be plain.  But using a real vanilla bean brings out the boldest of flavor that will make this ice cream seem anything but plain.  It takes a bit of prep work but you will be rewarded in the end.  This sweet cool treat can stand on it’s own as well as add a layer of deliciousness alongside your favorite dessert.

    • Rhubarb Raspberry Crisp

      In early summer I am always on the lookout for fresh rhubarb. I love the tart and tangy taste of rhubarb that makes the most delicious desserts.  Occasionally I find it at the farmers market but rarely at the grocery store.  Imagine my surprise when I found fresh crisp stalks in my local grocery store.  I couldn’t pass them up and picked up several stalks of rhubarb along with some fresh raspberries with the idea to make a cobbler or crisp.  I decided to make individual crisps in half pint jars.  They were easy to make and really cute to serve for a special occasion.

    • Espinaca Queso Dip

      One of my guilty pleasures is chips and Espinaca Queso dip.  This creamy blend of cheese, spinach and jalapenos has become my favorite queso dip.  It’s made with Velveeta Queso Blanco which I know isn’t the healthiest choice but you just can’t beat the way is melts to perfection.  It tastes so good combined with fresh spinach, tomatoes, onions and jalapenos.  I made Tex-Mex burrito bowls and spooned some of this creamy cheese over top.  I got thumbs up all around!

    • Steak, Potato and Poblano Quesadillas

      My favorite food holiday by far is Cinco de Mayo!  This holiday celebrates the Mexican culture and heritage with festivals and parades but mostly with great Mexican food.  While I don’t need an excuse to eat Mexican, I always look forward to making something special to celebrate the day.  I’m making quesadillas filled with marinated steak, thin sliced potatoes and poblano chiles.  It’s Muy Bueno!  Paired with guacamole and salsa makes this quesadilla a party for your taste buds!  Happy Cinco de Mayo all!

    • Angel Food Cake with Lemon Curd and Fresh Berries

      Yesterday was Cameron’s birthday!  He’s off on an adventure for a few days rock climbing, which is what he lives for.  So I’m planning a belated birthday bash serving an angel food cake with a lemon curd filling, fresh berries and whipped cream.  There’s nothing like a home made angel food cake, it’s so light and delicious.  And while the cake takes only egg whites, the curd uses only the yolks.  So even if you don’t use the curd right away, this is the best time to make it as it can be frozen and used later.  The lemon curd and fresh berries really do belong together.  So if you want to whip up something special for your loved ones, this would definitely make their day! Happy Birthday Cam!

    • Chile de Arbol Salsa with Roasted Corn

      The other day I found fresh corn advertised in the sale circular.  It seemed a bit early for having corn on the cob but it was on sale so I had to check it out.  When I saw the golden silk and perfect kernels I found myself picking up a half dozen ears.  I had planned to roast it outside, but an unexpected rain storm came up and I had to find an alternative.  I searched the web to see if anyone roasted corn in the oven.  As it turns out, yes, some do roast it in the oven and find it quite tasty.  Obviously I wasn’t going to do any grilling today and I didn’t want the corn to sit out another day so I tried the oven roasting method.  It worked really well!  I had some extra corn left over and decided to make salsa in the Molcajete and add the left over corn kernels.  It was so good!  Everyone loved it and I thought it was worthy of sharing!

    • Braised Beef Stew with Root Vegetables

      Just when I think old man Winter is gone for good, he laughs at me with a cold blast of wind and rain that chills me to the bone.  So I decided to make up a hearty bowl of braised beef stew with root vegetables to warm up.  I spent an afternoon prepping the meat and veggies and as they simmered on the stove, the aroma and warmth it brought was a welcome feeling.  And with such a large pot of stew I would have leftovers for a couple days.  A little break from the kitchen would give me some extra time to pick up a book and enjoy some “me” time!

      If you’ve ever heard of kitchen sink cookies, they have a little bit of everything baked into them. One might call these pantry cookies because it was the pantry that I went searching for something inspired.  What I found was a leftover bag of chocolate chips, a jar of peanut butter and some oats.  Any one of them would make good cookies but why limit my choices to only one when I could have them all?  So I added a bit of each to my mix and the combination was a resounding YUM!

    • Beef and Snow Peas Stir Fry

      I love a good stir fry.  It’s one of those meals that takes little preparation and cooks up in minutes.  Plus I can get a few vegetables into my husband who is pretty much a meat and potatoes kind of guy.  He did however enjoy this stir fry with snow peas and shitake mushrooms. Along with some grated ginger and garlic, I made a spicy and slightly sweet sauce which was oh so fragrant throughout the kitchen.

    • Smoked Sausage Jambalaya

      One of my favorite meals to make is Jambalaya.  This one pot meal is easy to put together but doesn’t lack for flavor.  Andouille may be the traditional sausage in Jambalaya but I find that the smoked sausage holds it own surrounded by spices, onions, garlic and wild rice.  We usually break off a piece of crusty baguette to go alongside and call it a meal.
