      This summer I’ve been really good about grilling foods and eating healthier but I just fell off the wagon.  I’ve been craving comfort food and made some Chicken Fried Chicken with some of the best cream gravy I’ve ever had.  It tastes just like fried chicken but the process is a little different. Chicken fried chicken is boneless and run through an egg buttermilk bath before heading to the flour and into the fry pan.  It fries up crispy brown and topped with cream gravy which makes it taste so good.  If you’ve never had this Southern comfort, well . . .  you just don’t know what you’ve been missing!

      I made this chicken sandwich a couple weeks ago with a big red steakhouse tomato and it was fantastic.  The flavors of grilled blackened chicken with smoked gouda cheese and chipotle mayo made it special.  Joe and I loved it so much I promised to make it again soon.  I went to the farmers market to pick up a tomato for the sandwich but changed my mind when I saw these big ole green tomatoes sitting out on display.  Why not try something different . . .  so I changed it up a bit by adding a fried green tomato slice for a tangy twist.  For those who love fried green tomatoes, this sandwich will not disappoint, but if you are a traditionalist, by all means go with a big slice of summer red.  You can’t go wrong either way.  And if you can stand the heat of the oven, roast some potato wedges with a drizzle of olive oil, salt and your favorite herbs.  It makes the best side kick to any sandwich!

      July marks the beginning of peach season and I for one couldn’t be happier.  Sweet summer peaches make the best desserts, at least I think so.  We made a trip to the farmers market yesterday where a vendor was roasting whole peaches.  Once roasted they would sprinkle sugar or cinnamon over the top with a drizzle of honey.  Joe had to have one and actually let me share in a bite or two.  The peach was warm and sticky and tasted delicious.  After devouring that peach there was no way we were walking out of there without a basket of peaches to take home.  Peach dumplings were an obvious choice as they are easy to make and fun to eat.  I wanted to try something other than the traditional vanilla ice cream on the side so I added a warm vanilla cream sauce.  I can honestly say I’ve never tasted a more delectable peach filled pastry.

    • Hummus and a Layered Mediterranean Dip

      I’ve never been a huge hummus fan but my guys all seem to love it.  They are always picking up a tub of hummus and pairing it with pita chips or crackers and they always pack a tub of it on their backpacking trips. They say it’s healthy and is rich in good fats and protein so who am I to deny them this healthy snack.  Since I’m trying to be a little more health conscience I thought I might try to make some homemade.  It was such an easy process, just load all your ingredients into a food processor and pulse until you get the right consistency.  It turned out really good but I had way more hummus than I had expected so I scooped out about a cup of the hummus and made a layered Mediterranean dip.

    • Grilled Veggie Panini with Balsamic Glaze

      It’s been gorgeous weather this week and I decided to pick up some veggies and make panini’s for dinner.  I sliced and assembled my veggies and went outside to set up the grill.  It was sunny and in the upper 70’s, just perfect outside but I noticed that the wind was picking up.  I drizzled my sliced veggies with olive oil and sprinkled with salt and pepper and began grilling.  Everything was going well but the wind was just wicked.  About the time I finished, I realized that big clouds were rolling in.  I had just enough time to let the grill cool and get everything inside before it turned dark and started pouring rain.  The veggies turned out perfect and I piled them together between sourdough bread with some fresh mozzarella cheese, spinach pesto and a drizzle of balsamic glaze.   It was just the perfect combination!

      It’s been awhile since I’ve made any pasta.  During the summer month’s I get caught up in grilling outdoors and picking up farmers market fruits and veggies that I can’t get any other time of year.  Lately I’ve been feeling a need for some comfort food and pasta is especially good to bring back the comforts of home.  I love anything pesto and this turned out especially good using fresh cherry tomatoes, inspired from Lidia Bastianich of “Lidia’s Italy”.   The flavors that come through are so fresh but at the same time robust.  I added some crisp bacon bits to compliment the fresh tomato.       I have been obsessed with skirt steaks this summer.  It is one of the most affordable and tastiest steaks to ever put on the grill.  I’ve been making steak tacos a lot this summer and saving any extra steak for a steak salad.  It’s so good over leafy greens with some crunchy tortilla strips.  I made a spiced up dressing with a creamy peppercorn base mix from Penzey’s.  I lightened it up by subbing greek yogurt for the mayo and buttermilk for the sour cream.  It was so good!  Adding a roasted jalapeno, some green onion and cilantro gave it a flavor of the southwest.

      I’ve been wanting to try out this recipe ever since I flipped through the pages of a cookbook called “Roux To Do”.  It’s a Junior League cookbook from Southeast Louisiana and I’ve found so many recipes that sound downright delicious.  I’m a huge fan of Louisiana cuisine with it’s Cajun and Creole influences and this recipe struck me as something different . . . something that I’ve never tried before but I definitely wanted to taste.  The scallops were fantastic with the perfect spice blend.  I was surprised at the taste of the aioli, it was much milder in flavor than I had expected but it really did compliment the scallops.  A fresh citrusy pineapple salsa on the side was just the thing to pull it all together.

      Every summer when the corn and tomatoes start showing up at the farmers market I make a batch of black bean and corn salsa.  Nothing tastes better along side a good grilled steak or chicken or as a topper for your favorite taco.  Plus I could eat it all day with nothing but tortilla chips.  It’s completely vegetarian and packed with everything good for you.  I found these little cast iron half pint kettles at a Lodge Factory Outlet in the little town of South Pittsburg, TN, near the Alabama border.  What a store. . . they have almost anything you could dream of, if you’re into cast iron.  A little room at the back has some great bargains on many of the cast iron skillets, dutch ovens some other items listed having a scratch or blemish.  I couldn’t find anything wrong with them and came home with a large 12 inch skillet, a griddle/grill and these mini kettles.

    • Herb Butter with Green Chile

      Looks sinful huh!  Actually it doesn’t seem that bad after the Kookamonga burger challenge Joe and I witnessed in Memphis.  We went to this little joint called Kooky Canuck where they make these monster burgers filled with 4, 6 or 8 pounds of ground beef alone.  We watched while a young couple (ironically they were from KC) attempted the 2 person challenge of eating a burger with 6 pounds of meat loaded with an additional 6 pounds of cheese, lettuce, tomato, onion and bun.  If they completed the challenge in 1 hour or less they ate for free.   I knew they were doomed when it was announced that the burger was a mere  18,000 calories.  If you could see the eyes on the young girl, you would know she was about to freak out!  So while we may be in a butter coma for the evening, I think we’ll survive.  As long as we don’t do this very often.  Once a year or so I treat my guys to a steak dinner with all the trimmings and Father’s day seemed like the perfect time.  Firing up the grill for some grilled corn on the cob and a medium rare rib-eye steak is about as good as it gets, but add a little herb butter and you’ve got something extra special.  You certainly don’t have to add green chile, but it sure does spice it up.  I planted some herbs earlier in the Spring that are coming along quite nicely so I snipped some chives, parlsley and thyme plus I had some cilantro in the fridge. Along with some salt and green chile this butter makes any meal special.  Just don’t do it too often!
