      I was in New Mexico over Halloween this year leaving Joe to take over the job of handing out candy for the trick or treaters.  I asked him to save any leftover Reese’s Peanut Butter Cups so that I might bake a batch of cookies.  It was a light crowd so he had plenty of candy left over.  I know he had to use all his willpower not eat those Reese’s, but to his credit he hid them away in the freezer until I got home.  After thinking about it I decided cookie bars were the way to go.  I found a great recipe from “Mom On Time Out” that sounded so good I just had to try it out.  For all the peanut butter lovers, these bars are for you!

      Recently we had some family over for a get together and I made a batch of heath bar cookies. Yes, I braved the hot oven but it wasn’t so bad, I started early and got done before the heat really set in.  Cookies make people happy no matter what time of year even though it might be a challenge to bake during the hot summer month’s.  I added a few toffee pieces just as they came out of the oven which melted right into the cookie for an added bit of crunchy topping.

      If you’ve ever heard of kitchen sink cookies, they have a little bit of everything baked into them. One might call these pantry cookies because it was the pantry that I went searching for something inspired.  What I found was a leftover bag of chocolate chips, a jar of peanut butter and some oats.  Any one of them would make good cookies but why limit my choices to only one when I could have them all?  So I added a bit of each to my mix and the combination was a resounding YUM!

      Joe loves this time of year because it’s the time of year that I bake cookies.  He loves all sweets but cookies are his favorite.  I’ve been making these peanut butter cookies for several years now from a recipe I found in a Penzey’s spice catalog.  There are some great recipes in that catalog!  I love big chewy cookies and these cookies virtually bend, they are so soft.

    • White Chocolate Macadamia Nut Cookies

      The wait is over!  My homemade Vanilla Extract and Vanilla sugar that I started in August is finally ready.   I waited 8 weeks and it’s finally time to try it out.  I found just the recipe, White Chocolate Macadamia Nut cookies.  I love white chocolate, which isn’t really chocolate at all, but that’s beside the point.  And I have several cans of Macadamia nuts that Joe and I brought back from Hawaii saving for a special occasion.  I think unveiling the Vanilla Extract and Vanilla Sugar is pretty special.  The cookies turned out pretty good too!

    • Dark Chocolate Pretzel Cookies with Sea Salt

      Everywhere I turn I see recipes combining dark chocolate and sea salt.  My hubby Joe loves dark chocolate and pretzels so I decided to bake up some of these trendy cookies and see what all the fuss was about.   It’s hard to describe but you get a bite of sweet and then a bite of crunchy saltiness chasing behind.  I kept thinking it was that it was like the first time I sipped a sweet margarita in a salty rimmed glass.  If you like sweet and salty things, this is the cookie for you.       I’ve been craving cookies, maybe more like I crave baking cookies.  The kitchen is my sanctuary on cold winter days with the oven warming and the aroma of fresh cookies baking.  And what’s better than a warm cookie and a glass of milk to lift your spirits.  I decided I’d just go with what I could find in the pantry since I didn’t want to go to the store.  When I spotted the oats, my decision was made . . . Oatmeal Cookies.
