      The blueberries have been abundant and very sweet this season so I’ve been stocking up. Anytime I find good berries I put a few extra pints in the freezer for future recipes.  It’s been much cooler this August so I felt like baking and made two loaves of brioche bread.  Nothing smells better than fresh bread from the oven!  We ate one loaf and I set the other aside to make bread pudding.  Since I had extra blueberries at the time it made sense to combine the two and I added some cream cheese to make it extra moist and almost cheesecake like.   Joe thought it was the best thing he’d ever ate, but then again every time I make dessert he says that.  What can I say, he’s just a sweet guy!

      This is what comes from coffee ice cream and heath bar cookies . . . coffee toffee ice cream bars!   There’s just something about coffee and toffee that’s meant to go together.  From now on whenever I make coffee ice cream I will likely be tempted to make cookies so that I can have this sinfully delicious treat.  These are really fun to eat and great for a party of friends or family.

      One of my favorite flavors of ice cream is coffee, but I never thought I’d be able to recreate the taste like they make at an ice cream parlor.  This recipe is about as good as it gets and comes from “The Perfect Scoop” by David Lebovitz.  It creates a rich creamy ice cream with the flavor of coffee, but not too overpowering.  It’s a bit on the sweet side and I might cut back on the sugar just for my own preference.  You also have the option to use decaffeinated beans which I would probably use next batch.  I wasn’t thinking about it at the time and used caffeinated beans but found that having a bowl in the evening can make for some fitful sleep.  Oh well, it was worth it!

    • Strawberry Limeade Sorbet

      One of my favorite summertime treats is sorbet.  I love almost any flavor of sorbet and it’s so simple to make.  Originally I was going with a straight up strawberry sorbet made with a simple syrup but when I saw the limeade concentrate in the freezer, I knew the combination was too good to pass up.  I switched out the simple syrup with the prepared limeade and added a bit more sugar to counter the tartness.  It was very refreshing with a hint of citrusy lime in the background.  This is definitely one of my “make again soon” recipes!

      As a summertime treat, ice cream is hard to beat.  And anytime you have a slice of fruit pie or cobbler, a scoop of Vanilla Ice Cream can’t be far behind, at least I think so.  I love this recipe, adapted from “David Lebovitz Living the Sweet Life in Paris”.   With so many flavors of ice cream to choose from  you might think vanilla to be plain.  But using a real vanilla bean brings out the boldest of flavor that will make this ice cream seem anything but plain.  It takes a bit of prep work but you will be rewarded in the end.  This sweet cool treat can stand on it’s own as well as add a layer of deliciousness alongside your favorite dessert.

    • Mango Sorbet

      You would think it was tropical season from the ads that came out this week in our local grocery store.  A sale on exotic fruit from Dragon Fruit to Rambutin, to Star Fruit to Mango and Papayas.  I am not one to let a good sale go by so I picked up a little of everything.  But what I had in mind was a Mango Sorbet that I’ve been dreaming about ever since I got my ice cream maker.  It’s so handy and makes quick work especially with sorbets.  It basically requires a simple syrup mix of water and sugar plus added fruit. How easy is that!

    • Blueberry Scones with Cinnamon Streusel

      Ever have that feeling that you’re craving something but you just don’t know what that something is!  That happens to me all the time, wanting something salty . . . or something sweet. . . or something comforting but nothing particular in mind.  Sometimes you have no further to look that in the freezer.  That’s where I found the blueberries that I had packaged up last summer when they were abundant and so good.  What was I saving them for?  I could think of nothing specific so I pulled out a small package and decided they would be perfect for a batch of scones.  I topped them with a cinnamon streusel that gave them a little bit of crunchy sweetness.

      In honor of Fat Tuesday I’m celebrating with a big serving of warm banana bread pudding.  I had a loaf of brioche bread that has been sitting around for a few days and some bananas that were starting to turn.  The two seemed destined to come together to make a warm melt in your mouth dessert.  Although, if you’re counting calories, this isn’t the dessert for you.  It’s rich with cream and eggs and caramelized bananas in a buttery rum syrup.  All things in moderation, right!

      My newest kitchen toy is an ice cream maker and boy am I having fun!  I wanted something simple to start out and found a recipe for vanilla frozen yogurt with only three ingredients.  This was so simple and after the initial combination of ingredients and chill time, the ice cream maker made some magic.  It was very creamy and melt in your mouth good!

    • Peanut Butter Truffles

      I’ve been planning on making truffles for weeks and set out to make a dark chocolate truffle that involved a lot of prep work with several steps.  However, I’ve been a bit under the weather and have decided to go easy on myself and make these Peanut Butter Truffles which take very little time.  One of the local grocery stores mails out a magazine called “Seasons” which is filled with seasonal recipes.  I found this easy to make truffle recipe and thought it sounded good.  A little melting in the microwave, a little mixing, a little chillin out in the fridge and they are ready to go.  Really cute and fun to eat too!
