      If you love fig newtons you are going to love these sweet rolls.  Peel away the layers of this sweet brioche dough to find a sticky fig walnut paste that reminds you of the newtons you always loved.  The maple icing over top goes well with the fig flavors and makes your fingers sticky delicious!  I have to send a Thank You to Joan for the figs as she always sends home a treat whenever we visit.  My guys thought the figs were up for grabs and as I started seeing them disappear I set aside a small amount to make sweet rolls.  Getting started on the brioche dough a day ahead made the rest a breeze.

    • Brioche Bread Pudding with Berries

      This bread pudding was inspired by a recipe I found in “The Craft of Baking”.  I picked up this cookbook at the library and as I thumbed through it I found myself drawn to the page with the berry brioche pudding.  It looked so good with the crispy squares of bread on top fused together with juicy berries and a warm custard.  With berries in the freezer and a loaf of brioche bread on hand I set about making this berry bread pudding.

      Do you remember the series of “Beautiful Cookbooks”?  I find myself flipping through the pages just to drool over the beautiful pictures, but I also find many recipes that I would love to try.  I ran across this recipe in the “Southwest Beautiful Cookbook” and I was intrigued.  The picture looked like a margarita in a jar and I wondered if it would taste as good as I imagined.  As it turned out it was a sinfully sweet version of a classic margarita that I could spread on a cracker, biscuit or muffin.

    • Salted Caramel Apple Bars

      Nothing feels more like Autumn than the aroma of warm apples and spice filling the kitchen.  My salted caramel sauce was sitting in the fridge waiting to be used for more than just a topping for ice cream or dipping apples.  I had been contemplating a caramel apple pie but in the end I decided on these Salted Apple Caramel Bars.  I pulled the pie recipe and used it as my guide for the filling and topped it with a drizzle of salted caramel.   These are a  treat any time of day but I especially loved them in the morning after drizzling a bit of caramel on my bar I would dip the caramel coated spoon into my coffee . . . Yum!

    • Salted Caramel Sauce

      I don’t know about you all but it sure is feeling like Fall around here in the Midwest.  The morning air is crisp and cool and it’s so refreshing to be able to open up the doors and windows for some fresh air after a long hot summer.  I’ve been thinking of fall baking and patiently waiting on my homemade Vanilla Extract and Vanilla Sugar which still need a few weeks for the fullest flavor to come through.  I found another tip on that same holiday episode of “Kelsey’s Essentials” on how to make Salted Caramel Sauce which can be used in so many recipes.  It looked so easy that I had to give it a try.  My first attempt, I had a hiccup when I read the recipe too quickly and ended up with rock candy instead of caramel syrup.  The key is patience and no stirring.  My first batch I stirred furiously and when the liquid evaporated it was like a vacuum sucking the water out and the sugar crystallized in seconds.  I was devastated at first wondering what I did wrong, so I looked at the the recipe again and there it was plain as day, it said NOT to stir once it begins to boil.  Well, I gave it another go and this time I had the tastiest caramel sauce ever.

    • Fig and Brie Tart

      Recently Joe and I were in a Whole Foods store where they had a sampling of figs.  Green, brown and black figs cut up and ready to taste.  We tasted all three and we decided the black figs had the most flavor.  We picked up a few to take home and I started looking for ideas and recipes for a fig tart.  I came across a recipe from a blog “Koko’s Kitchen” that looked and sounded delicious.  I took her idea of making a tart with a brie and ricotta cheese filling topped with honey glazed walnuts and figs.  But where she made a pear sauce to go over top, I chose to add pear slices alongside the figs and make a cream cheese drizzle to add some sweetness.  It was so different than anything I expected and was such a treat.  It’s a little savory with the creamy cheeses complimented with the fig and pear which tasted so good.  The cream cheese drizzle was like the icing on the cake, you had layers of savory cheese, natural fruit slices and a hint of sweetness over the top.

    • Lingonberry Crepes

      Have you ever had the Swedish Crepes at IHOP?  I was hooked from the first bite of those delicate crepes topped with a lingonberry butter and lingonberry sauce.   I learned they are a tart berry grown on low evergreen shrubs throughout Scandinavia’s forests.  The only time I’ve ever come across Lingonberry Sauce was at World Market aka Cost Plus and I had to pick up a jar.   They are dark red in color and tart like a cranberry but smaller.  I would have to say these belong on a dessert menu and unlike IHOP, I chose to fill the crepes with a lemony cream cheese filling.

      With the holidays around the corner comes the craving for sweets and makes me think of my favorite scones with dried cranberries and orange zest.  They are so easy to make and taste just like they came from a pastry shop. I  don’t usually do breakfast but I will make an exception for a scone to go with my morning coffee.  They are so tasty with an orange glaze drizzled over the top.

    • Apple Butter

      It’s apple season and since I have apples on hand I had to make apple butter.  I brought out the slow cooker for this one because it’s so easy to fill it and leave it.  I set it up to cook overnight and by morning the smell of apples and spices filled the kitchen.   If you happen to have an apple machine that peels, cores and slices your apples, it really makes the job faster and easier because it’s consuming when doing it by hand.  I made enough to put some in the freezer while keeping a couple jars in the fridge.  I love it on a piece of buttered toast or a biscuit fresh from the oven.

    • Mom’s Apple Dumplings

      Recently Joe and I got together with some of his family from Michigan and I ended up with a 1/2 bushel of Michigan apples.  They are delicious apples for eating or to cook with.  No, not “Delicious” apples, but rather Northern Spy apples.  One of the first things I wanted to make was my Mom’s apple dumplings.  This has always been my favorite apple dessert with the pastry covered apples and simple syrup.  Mom always made them with biscuits but when I saw the puff pastry, I thought I would give it a try.  Turns out it was a thicker dough and was easier to wrap up the apples, so that’s my contribution to Mom’s dumplings.  Continue reading →
