      Ever had one of those cute little skillet breakfasts at “Le Peeps” or “First Watch”?    They serve up an individual skillet layered with country potatoes or hash browns, topped with cheese and your favorite breakfast toppings.  Then they add some cracked eggs over top and bake to perfection. It’s a great dish to make at home and would be perfect for a brunch or casual get together.  Since I was going for easy, I pulled out a box of dehydrated hash browns.  I actually like these better than frozen hash browns, they cook up quick and crisp nicely.  And I picked up some spicy Chorizo from our local smoke house which is much leaner and wasn’t as greasy.  How I managed to crack 8 eggs without breaking one is a wonder!  I tried to space them out evenly so that it would be easier to serve but raw eggs slip and slide where they want.  Even so, I think this skillet dish is quite appealing.

    • New Mexico Red Chile Posole

      Traditional New Mexico Posole is a rich hearty stew made from red chiles, pork and dried corn also known as hominy.  Most New Mexicans have a bowl of posole and tamales during the holidays between Christmas and New Years.  I will miss being in NM for the holidays, seeing the lighted luminarias and the aroma of chile in the air which is breathtaking this time of year.  But I won’t miss out on having a comforting bowl of posole with a pork tamale.  This year I made a more traditional red chile posole and it was so good, it reminded me of home.  Have a wonderful holiday everyone!

      It hit me this week how soon the holidays will be here.  Time has quickly gotten away from me and I’ve had to rush around trying to get things done.  With that in mind I haven’t had a lot of time to make dinner. When I’m crunched for time I sometimes pick up a rotisserie chicken which saves me the trouble and usually makes more than one meal.  I picked off the leftovers and chopped it to make my tried and true recipe of chicken and dumplings that everyone loves. With the cold weather we’ve been having it sounded like the perfect time for a comforting bowl of stew with a dollop of mashed potatoes on the side.  It’s like immersing the potatoes into a dumpling gravy that tastes oh so good.  Stay warm everyone and have a great weekend!

      It looks like we may have a cold blustery weekend with dropping temperatures and the possibility of rain or snow.  I thought it would be the perfect time to hunker down by the fire with a good book and a warm bowl of soup.  You see, I’m not a cold weathered person and the least bit of cold seems to go right through me.  I’ve always been this way, once the cold settles into my bones it’s there for the duration and I don’t thaw out until Spring.  Something hearty . . .  something rich would be just the thing to warm my spirits.  With that in mind I reached for my recipe for chicken and wild rice soup which is filling as well as comforting.  One bowl and it may be time for a nap!

      I’ve been saving a pork butt roast in the freezer for something that could last more than just one meal.  I love the aroma of slow cooked pork and anything that can be stuffed in a tortilla makes for an easy and tasty meal.  These chunks of pork were cooked low and slow with the flavors of chiles and citrus to the point of falling apart.  I had a plan to make tacos one night and a use the leftover carnitas for a pot pie or shepherds pie for Joe and I the next night. After all, this was a 3 pound roast, surely there would be plenty for the next day . . . but as it turns out my youngest/midnight bandit ate near all of it before morning!

      If you go to the trouble to make ravioli from scratch, it’s a must to set aside some to make toasted ravioli.  It’s really simple to put together and pan fries in minutes for a quick meal.  Using thawed ravioli, these pasta squares cook up crisp while trapping the gooey cheese inside the shell.  All that’s needed is a tasty pasta sauce.  I tried out a new recipe for a tomato based sauce with pancetta and herbs.  It’s must have tasted pretty good because the guys devoured them in no time.

      It’s good to be back after a few weeks.  Joe and I went to the East Coast and enjoyed some sun and sand, some hiking, and took in some historical sites.  It was wonderful but at the same time exhausting.  We walked many a mile each day while taking in every moment.  It’s taken a good week to get back in the groove back here at home.  Since we’ve been back the weather has cooled down considerably.  The clouds and rain have descended upon us and makes me yearn for a bowl of chowder.  Looking for something a bit healthier and vegetarian I went with some zucchini, corn and green chile.  It was packed with flavor and spice which was just what I was looking for.  I added a bit of finely grated Oaxaca Mexican cheese which melted perfectly and made the chowder extra creamy.  I was hoping it would last for a day or two but someone found it in the wee hours of the night and it was gone by morning.  Wonder who that could be??  I’ll give you 2 guesses!

      Every summer when those green tomatoes start showing up at the farmers market, I just have to have a few.  It’s one of our favorites and I think what makes it special is that I only make them once a year so everyone looks forward to them. This year I decided to re-create an appetizer that Joe and I had on vacation in Gulfport, MS  a few years back. It was deemed a Gulf Coast favorite layering fried green tomatoes with a spicy cream sauce with crawfish tails, bacon, mushrooms and green onions.  It was sinfully delicious and I knew one day I would like to try and make it myself.  I wasn’t sure if I could pull it off but they were a big hit and now we can’t wait until next summer and our next fried green tomatoes.

    • Hatch Corn Fritters and Zucchini Fritters

      August means it’s “Hatch” season.  The first green chile have arrived but I haven’t found any roasters set up yet so I just picked up a few to get started.  The first thing I wanted to make was some salsa so I went to the farmer’s market to pick up fresh tomatoes.  But as usual I get caught up in all the fruits and veggies and picked up some zucchini and corn too.  I had recently been drooling over a post from Kevin at “Closet Cooking” for Jalapeno Popper Corn Fritters  which gave me the idea to make fritters with the Hatch green chile.   I tweaked the recipe a bit and made a zucchini version too.   I topped them with some Fire Roasted Salsa and Flamethrower Sauce.  They were quite filling and really tasty, enough to make a whole meal out of them.

      Awhile back Joe and I ate at a Mexican restaurant where they served Charro Beans on the side.  That first bite brought back memories of something my Mom used to make.  Only she called them Chuckwagon Beans and I remember asking her to make them.  I looked up an old index card with her handwritten recipe and found that she seasoned her pinto beans with cooked bacon, onion, green chiles and tomatoes.  Of course out on the farm we rarely had a meal without a pot of beans on the table, but I remember the Chuckwagon beans as special, much more flavorful.  Since Joe doesn’t like beans I kind of got away from the pinto’s over the years.  I pulled out Mom’s old recipe and tried it out just to see if it tasted like the charro beans and I’m happy to say they were pretty darn close.  Thanks Mom. . .  for the recipe and the memories!
