    • Chicken Fried Pork with Green Chile Gravy

      There are so many ways that pork and green chile are paired together.  Some of the classics are green chile stew, pork tamales with verde salsa, or green chile posole.   With the cold weather sneaking in again before Spring, I was hungry for some comfort food.  Searching the freezer for inspiration, I found a pork roast that was very lean.  I sliced it into 1/2 inch portions, pounded it into thinner pieces for a very tender chicken fried pork steak.  As with all chicken fried dinners you must have cream gravy. It’s a must!  But as I made the gravy I added a big scoop of green chile. Let me just say that green chile gravy is the most delicious thing you have ever tasted over chicken fried pork.  Call me New Mexican, it’s all about the chile!

    • New Mexico Inspired Chicken Pot Pie

      It’s been awhile since I’ve posted any recipes.  My camera was acting up and developed a lens error which prevented me from taking pictures.  It took a few weeks to send it off and get it back in working order again.  Then the holidays were upon us and I had my hands full with no time to blog.  I’m just getting back in my groove and wanted to share one of my favorite pot pies with you.  Pot Pie is a favorite of mine, however my hubby Joe doesn’t enjoy my enthusiasm for pot pie.  So I compromised and made a pot pie with minimal dough, just a crusty puff pastry dough on top. And I added some spicy chicken and veggies that we both love, roasted corn, green chile and red onion.  It had all the flavors of home and it couldn’t have tasted better.  They were made in individual ramekins, just the perfect size to heat up for a quick lunch or have for dinner with a side salad.

      Time to make ravioli to put up in the freezer!  I like to make ravioli in the fall when the weather is cooler and I can spend a whole day in the kitchen.  And it truly takes me a whole day to make these starting with putting together the meat filling to making the pasta dough and finally assembling, cutting and packaging for the freezer.  It is a great deal of prep work but I find it rewarding especially on those occasions when I need a quick meal.  And they tastes so much better than any frozen ravioli that you find at the store.  These frozen ravioli can go directly into boiling water and be ready in just a few minutes.  And if you like toasted ravioli like we do, thaw a bag or two in the refrigerator.  This batch made approximately 6 dozen ravioli.  That will make quite a few meals for any family.

    • Green Chile Infused Fried Chicken

      One of my favorite restaurants, the Red Door Grill offers Jalapeno Fried Chicken every Thursday and only on Thursdays.  Let me tell you it’s REALLY REALLY good!   It’s marinated in buttermilk and jalapenos for 4 days or so they say.  I was so impressed that I decided to make my own fried chicken but I chose to use Hatch green chile in lieu of jalapenos.  What New Mexican wouldn’t pick green chile over jalapenos?  I pan fried it browning the outside and then let the oven do the rest.  For me it’s much easier to cook the chicken evenly throughout that way. The chicken is so moist with a golden crunch outside and a hint of spicy green chile in every bite. A side of mashed potatoes with green chile gravy made this one of the best comfort meals I’ve had in a long time!

    • The Best Stir Fry Sauce for Chicken and Veggies

      I have been experimenting with stir fry sauces for years trying to create a sauce that tastes authentic as well as having a ton of flavor.   I love vegetables but there’s only so many veggies my husband will eat so I have to find flavors that mixed with vegetables will appeal to him.  With this sauce I can stir fry almost any vegetable and he will eat it.  This recipe makes enough sauce for several stir fry’s, enough to last us at least a week or more.  Stir fry your favorite veggies and begin to add the sauce a spoonful at a time, tasting after each addition until you have just the right amount for your taste buds.  And it’s easy to add chicken, steak, pork or shrimp to the mix for a complete meal.

      As promised here’s another idea for any leftover Mayan pork.  While Josh enjoyed a Mayan pork sandwich from the food truck, I had a platter of Loaded Fries.  Oh boy were they good!  The fries were crispy and loaded with cheese sauce, fresh pico, cilantro lime cream and lots of Mayan pulled pork.  It was way too much for this girl to eat but I gave it my best shot!

      Today marks 5 years of An Inspired Cook!  I never thought this venture would be so rewarding, but it has truly been a lifesaver for me.  I love that my favorite recipes will forever have a place for my kids and family to go to for inspiration and bring back memories of our time together around the kitchen table.  I look back on the past 5 years as a labor of love, one that I have enjoyed so much more than I would have ever imagined.  I’ve been on an Asian food kick lately, partly because it’s so easy to make especially on these hot summer days when it’s just too darn hot to turn on the oven.  These potstickers are so good I made extra to put in the freezer.  I found that making fresh potstickers take only a few minutes to prepare and frozen take about 2 to 3 minutes more. What could be better than that!  I packaged 18 dumplings per freezer bag and thought we’d have enough for several weeks.  Turns out they are more popular than I thought and are just about gone.  I guess it’s time to make some more!

      There’s nothing better than freshly made warm flatbreads.  For years I’ve been making batches of flatbreads that I could store in the fridge.  My boys loved them because they could make a quick pizza or stuff them with taco meat and cheese.  They can be cut into triangles and toasted for fresh pita chips that can be dipped or topped with all sorts of things.  What I had in mind this time was a gyro using skirt steak.  I marinated bite size pieces of steak and stir fried it in my mini wok.  Chicken or pork can be substituted for the steak as well.  Add some sliced onion, chopped tomato and a dollop of tzatziki sauce and you’ve got a fresh meal that tastes every bit as good as if you had gone out to a restaurant.

    • Ancho Pulled Chicken Nachos with Green Chile Cheddar Sauce

      Joe took me out recently to a new place called Red Door Grill.  We were seated in the dining room right in front of a huge glass window looking into the kitchen area where the staff were preparing delectable wood fired dishes.  They were grilling burgers, chicken, steak, and fish. Everything looked so tempting with wood smoke rising  and open flames shooting through the huge grilling area.  I was so conflicted when it came to ordering but in the end I decided on these Rojo Nachos with a green chile cheese sauce, pico de gallo, guacamole, pickled jalapenos, queso fresco and sour cream.  You could also add Ancho Pulled Chicken for a couple dollars more. Yes, please!!   Our server brought out a massive mound of fresh corn chips topped with all the afore mentioned favorites.  I couldn’t decide where to start it was so gorgeous.  It appeared that they pooled some of the cheese sauce on the bottom so that the nachos wouldn’t get soggy so quickly. Everything else was evenly piled on with so many complimenting flavors. There was no way to eat it all even with Joe helping me out.  A week went by and I was still craving these nachos so I decided it was time to make my own.  So what do you think . . .

      When I need some comfort food and a quick meal I think of Chicken Parmesan.  You can’t beat the taste of crispy panko breaded chicken with melted mozzarella alongside spaghetti topped with the tastiest marinara sauce.  Most marinara sauces are made from canned tomatoes but I like to use fresh tomatoes when I can.  There’s just something special about fresh tomato sauce with fresh herbs.  This is also a frugal meal as I can make a meal for 4 using just one chicken breast.  Don’t worry, no one goes away hungry.  A hunk of french bread and a salad makes this a complete meal.
