    • Black Bean and Corn Salsa

Posted at 9:01 am by NativeNM, on June 25, 2013

      Black-Bean-and-Corn-Salsa-9

Every summer when the corn and tomatoes start showing up at the farmers market I make a batch of black bean and corn salsa.  Nothing tastes better along side a good grilled steak or chicken or as a topper for your favorite taco.  Plus I could eat it all day with nothing but tortilla chips.  It’s completely vegetarian and packed with everything good for you.  I found these little cast iron half pint kettles at a Lodge Factory Outlet in the little town of South Pittsburg, TN, near the Alabama border.  What a store. . . they have almost anything you could dream of, if you’re into cast iron.  A little room at the back has some great bargains on many of the cast iron skillets, dutch ovens some other items listed having a scratch or blemish.  I couldn’t find anything wrong with them and came home with a large 12 inch skillet, a griddle/grill and these mini kettles.

    • Chorizo Black Bean Soup

      Chorizo-Black-Bean-Soup-11

I love chorizo but chorizo didn’t always like me.  Recently I found a local smoked meat market that makes their own chorizo. It is much lower in fat and doesn’t cook out an excessive amount of grease the way some do while maintaining the spicy flavor.   First thing I wanted to make was soup.  I imagined a healthy and tasty black bean soup loaded with beans, chiles and corn and now a chorizo sausage that was lighter with very little fat.  It was terrific if I do say so myself!  And the best thing of all was I didn’t have to share.  Those who won’t touch beans don’t know what their missing!

    • Chipotle Pulled Pork

      Chipotle-Pulled-Pork-6

As it nears the end of May my mind wanders to the beginning of summer barbecue.  Pulled pork is one of our favorites, it’s fall apart tender and makes the best sandwiches.  Plus you can spice it up so many ways.  This time I went with a chipotle rub and sauce to flavor the pork and it was fantastic.  If you love that smoky spicy flavor of chipotles, you’ll love this barbecue.  We had our fill of sandwiches and then tried a new pulled pork pizza that I’ll be sharing soon.

    • Espinaca Queso Dip

      Espinaca-12

One of my guilty pleasures is chips and Espinaca Queso dip.  This creamy blend of cheese, spinach and jalapenos has become my favorite queso dip.  It’s made with Velveeta Queso Blanco which I know isn’t the healthiest choice but you just can’t beat the way is melts to perfection.  It tastes so good combined with fresh spinach, tomatoes, onions and jalapenos.  I made Tex-Mex burrito bowls and spooned some of this creamy cheese over top.  I got thumbs up all around!

      Quesadilla-9

My favorite food holiday by far is Cinco de Mayo!  This holiday celebrates the Mexican culture and heritage with festivals and parades but mostly with great Mexican food.  While I don’t need an excuse to eat Mexican, I always look forward to making something special to celebrate the day.  I’m making quesadillas filled with marinated steak, thin sliced potatoes and poblano chiles.  It’s Muy Bueno!  Paired with guacamole and salsa makes this quesadilla a party for your taste buds!  Happy Cinco de Mayo all!

    • Chile de Arbol Salsa with Roasted Corn

      Arbol-Salsa-with-Roasted-Corn-11

The other day I found fresh corn advertised in the sale circular.  It seemed a bit early for having corn on the cob but it was on sale so I had to check it out.  When I saw the golden silk and perfect kernels I found myself picking up a half dozen ears.  I had planned to roast it outside, but an unexpected rain storm came up and I had to find an alternative.  I searched the web to see if anyone roasted corn in the oven.  As it turns out, yes, some do roast it in the oven and find it quite tasty.  Obviously I wasn’t going to do any grilling today and I didn’t want the corn to sit out another day so I tried the oven roasting method.  It worked really well!  I had some extra corn left over and decided to make salsa in the Molcajete and add the left over corn kernels.  It was so good!  Everyone loved it and I thought it was worthy of sharing!

    • Verde Chicken Pizza

      Verde-Chicken-Pizza-7

Ever had a Verde Chicken Pizza?  Until recently I hadn’t either but it’s quickly become one of my all time favorite pizza’s.  So much so that I’ve made several in the past month.  Most pizzas are made with the  traditional red tomato sauce, sometimes a white sauce, maybe pesto or even a barbecue sauce, but what I had in mind was something a bit more New Mexican.  I decided on a verde sauce with a Mexican melting cheese and cooked seasoned chicken.  The dough comes straight out of the “Artisan Pizza and Flatbread in Five Minutes a Day”, which mixes Corn Masa flour in the dough to make the most aromatic dough when baked.  Fresh toppings and crumbled Cotija cheese round out this pizza.

    • Cheddar Cheese Soup with Pretzel Croutons

      Cheddar-Cheese-Soup-11

I love pretzel bread and every time I pick up a loaf I think of those big soft pretzels with cheese dip.   After giving it some thought, I decided to make a Cheddar Cheese Soup and toss some toasted pretzel bread croutons on top.    They were so delicious, a little crunchy on the outside and that soft pretzel like taste on the inside.  I was craving a cheese soup with a little southwest flare so I added some roasted Poblano chiles and Fresno red peppers.  A creamy Queso like soup!   Continue reading →

    • Chipotle Carnitas Burritos

      Chipotle-Burrito-10

Chipotle Mexican Grill makes the biggest and most flavor filled burritos around.  They are a company that embraces buying local from farmers that grow organic produce and raise animals in a humane way free from all the hormones that factory farms use.  I appreciate that but what keeps me going back is how good their food is.  They assemble their burritos in front of you with every topping in sight.  Choosing what you put in that burrito is half the fun. While I may not be able to duplicate the Chipotle burrito exactly, I think my version is pretty darn good.  I took a day to make all my fillers and toppings, enough to make 16 large burritos.  We ate our fill, then wrapped the rest in aluminum foil to freeze.

      Chile-de-Arbol-Salsa-8

As I sit here writing this I’m finishing off the last little bit of my Chile de Arbol salsa.  I made this salsa as part of an upcoming recipe for Chipotle Burritos.  But as it turned out this salsa became an addicting side salsa with chips.  I love the flavor of arbol chiles which gives the salsa an after burn that keeps you coming back for more.  I love making this in a molcajete because with each ingredient you see a new layer of flavor emerging along with an earthy aroma in the background.
