    • Spicy Chipotle Wings for Hockeytown’s Red Wings

Posted at 8:55 am by NativeNM, on January 18, 2013

      Chipotle-Wings-10

Hockey is back!!  After a long collective bargaining dispute between the NHL owners and players they have finally resolved their differences and on Saturday night my Detroit Red Wings will be back on the ice.  Half a season was lost due to the dispute while fans were left out in the cold.  Joe introduced me to hockey when we moved to Michigan in 1990 and I was immediately hooked.  We were only in Michigan for 3 years but I’ve followed my beloved Red Wings throughout the years and celebrate the beginning of each season with a big platter of wings.  They have become my traditional send off to my favorite team, “The Detroit Red Wings”!  This year I’m going spicy with a Chipotle sauce with a tangy dipping sauce.  I made a basting sauce from the homemade Chipotle Tabasco sauce which was thick and spicy.  So enjoy the wings and watch some hockey!

    • Chipotle Tabasco Sauce from Scratch

Posted at 8:30 am by NativeNM, on January 15, 2013

      Chipotle-Tabasco-Sauce-14

My family, especially Joe and Josh splash a little Tabasco on everything.  My pantry is full of Tabasco’s original sauce, green pepper sauce and chipotle sauce.  It feels like I’m replacing bottles every other week so I decided to try my hand at making some sauce from scratch and see if it would pass the taste test of my most critical judges.  I looked at the ingredients listed on the Chipotle Tabasco sauce bottle and started there.  The amounts were up to me to decipher and as I kept measuring and tasting I finally came up with a pretty good match.  It’s a little thicker and slightly less vinegary as the original but it’s hard to tell the difference when tasting them side by side. • Green Chile Posole with Corn Husk Muffins

Posted at 8:30 am by NativeNM, on December 21, 2012

Posole is a New Mexican tradition that some natives serve on Christmas Eve while others serve up a bowl on New Years Eve for good luck.  I’ve always been of the opinion to just have a bowl of posole anytime around the holidays and all will be good.  It’s comforting and reminds me of my New Mexican roots.  Last year I made Blue Corn Posole with dried blue corn and red chile.  This year I’m making a Green Chile Posole with white hominy, green chiles and poblano peppers. And just for fun I am also trying out a new corn husk muffin where you line your muffin pans with strips of soaked corn husks, ladle in the batter and out comes these cute little muffins that look like they grew right out of a corn stalk.  Wishing you all a very Merry Christmas and many blessings for the New Year!

    • Green Chile Apple Pie with Pine Nut Streusel

Posted at 8:44 am by NativeNM, on December 18, 2012

Christmas in New Mexico has many traditions, many of which I still honor.  This week I’m focusing on what might be on the menu in many New Mexican homes.  While this Green Chile Apple Pie isn’t something I’ve had before it tastes like something that might be served after a bowl of Posole and Tamales on Christmas eve.  I saw this pie made on the Cooking Channel awhile back from a pie shop in the San Francisco area and I was intrigued.  It sounded like something that would be served in New Mexico, not San Francisco, but no matter where it originated it was something I wanted a taste of.  This pie originally had a walnut streusel but I decided to go with pine nuts.  I grew up on pine nuts (most times still in the shell) which we called Pinon nuts grown from Pinon trees which also happens to be the state tree of New Mexico.  This pie was the most intriguing  pie I’ve ever made.  The first bite was “interesting”, and each bite afterward was like “hey, this is pretty good”.   As I took the last bite I decided I really liked it.

    • Margarita Chicken

Posted at 8:07 am by NativeNM, on November 6, 2012

Time is winding down when I can get outside and grill.  But this week we had a really nice day full of sunshine and I thought I’d better enjoy every minute of it!  All summer I intended to make Margarita Chicken but somehow I never got around to it.  I found these colorful heirloom cherry tomatoes that would make a beautiful pico to top my drunken chicken.  It was pretty on a plate with salty and citrusy flavors coming through in every bite.

    • Black Bean Soup

Posted at 9:09 am by NativeNM, on November 2, 2012

Black Bean Soup is a rare treat for me.  You see, my husband doesn’t eat beans.  I mean he doesn’t eat ANY beans of ANY kind, therefore I’ve gotten out of the habit of adding beans to our diet.  He definitely did not grow up in NM where beans, chiles  and tortillas are staple ingredients in every kitchen.  It’s getting colder and I’ve been in the mood for a hearty soup.  This recipe is definitely loaded with flavor with a variety of chiles, bacon, tomatoes, and seasonings.  And of course I couldn’t go without my toppings.  I couldn’t resist some crunchy corn tortilla strips with avocado slices and cilantro.  It definitely warmed my soul and lifted my spirits on this cold dreary day.

    • Molcajete Green Chile Salsa

Posted at 8:29 am by NativeNM, on October 9, 2012

If you are not familiar with a Molcajete and Tejolote, it is a Mexican mortar and pestle made from volcanic rock used to grind ingredients such as garlic, tomatoes and spices.  They remind me of the Native American grinding stones found in large rocks.  My sister Kat gave me a molcajete on our recent visit to NM and I’ve been anxious to try it out.  If you have a new molcajete it should be seasoned just as you would a new cast iron skillet.   There are many online sites that give instructions on how to season a molcajete which would be easier and probably more helpful I could explain.   I’m looking forward to all the spices I can now grind as well as making guacamole and endless salsa’s.  This salsa includes roasted tomatoes, tomatillos, garlic, onion, green chile, lime, and cilantro.   It was very aromatic as I started grinding the garlic and tomatoes.  Each added ingredient changed the texture and added another element of flavor.  Continue reading →

    • Green Chile Stew

Posted at 8:27 am by NativeNM, on October 5, 2012

There’s nothing more comforting to a New Mexican than a bowl of Green Chile Stew.  On our recent visit to Santa Fe, Joe and I sat down at a little sidewalk cafe to share a tamale and a bowl of green chile stew.  It was a rainy day with a chill in the air so a bowl of stew sounded wonderful.  The pork was tender, the chile was hot with big chunks of potato and a hint of cilantro.  It really hit the spot.  Joe mentioned again and again how good that stew was that I took it as a hint that I should make up a pot when we got home.  I started making this recipe years ago when Joe and I lived in Albuquerque and it always reminds me of home.

    • Tamales with Pork and Red Chile

Posted at 9:12 am by NativeNM, on August 31, 2012

It’s tamales part 2 with pork and red chile, which are probably considered a more traditional tamale.  They are a New Mexico tradition that you can find almost anytime but especially around Christmas.  I would have waited to make them closer to the holidays except I’m traveling home to NM soon and wanted to share them with family back home.  And I’m saving back a dozen or so in the freezer to have for the holidays.  Continue reading →

    • Pork Tamales with Verde Salsa

Posted at 8:56 am by NativeNM, on August 28, 2012

For years I’ve wanted to make tamales but was intimidated by the process and work that goes into it.  I’ve always heard it’s a job that works best with several people to help prep, assemble and package.   Since I don’t have extended family around to help me with this mission, I asked Joe if he would give up a weekend to help me.  He was happy to help since he loves tamales.  I went all out and made three different kinds of tamales, just in case Joe never wanted to do this again.  This labor  took 3 days to complete but I can now say I have home made tamales in the freezer.  I think if I give Joe some time he may come around and help me again someday.  We’ve been considering some sweet filled tamales next time around, but for now let me tell you about the first batch made with Pork and a Verde sauce with Hatch green chiles and cheese.
