    • Pork Carnitas Burritos with Verde Sauce

Posted at 8:33 am by NativeNM, on August 25, 2011

Remember the Salsa Verde, it makes a lot doesn’t it?  The benefits are that I have enough for dipping and also to make burritos.  Cameron, my youngest son loves burritos and since he was nice and asked me sweetly, I said okay.  I made the Salsa Verde ahead because it takes some prep time and it’s easier to have it on hand and ready to go.  You can make burritos with chicken or ground beef but today I’m making pork.  Usually I put a pork roast in the crock pot and leave it all day, but I just got a new dutch oven that I’m dying to try out.

    • Salsa Verde

Posted at 8:32 am by NativeNM, on August 19, 2011

Have I mentioned how much I love salsa.  Well, I do!  An I don’t feel guilty because I make it myself without preservatives, I can control the salt content and I use fresh ingredients.   Salsa Verde is always a prelude to enchiladas or burritos because I make a big batch, save some for dipping and the rest will make a sauce to smother enchiladas or burritos.  Inspired by Bobby Flay who makes a similar salsa.

    • Steak Fajitas

Posted at 9:04 am by NativeNM, on July 19, 2011

Flank Steak on the grill is oh so delicious.  Whether you make a rub or a marinade, it always tastes good and is very easy to make.  I happen to love Steak Fajitas with Monterey Jack cheese, roasted corn salsa, guacamole, and grilled onions & red pepper, however you can use whatever you like for toppings.

    • The Salsa

Posted at 7:14 pm by NativeNM, on July 9, 2011

I may be proud of my Salsa more than any other recipe.  It’s evolved over the years and tastes different based on the tomatoes I have on hand.  Fresh garden tomatoes are the best of course, but there’s only a short period of time when I have them on hand.  So on those occasions when I have a craving and no fresh tomatoes I have to go with canned tomatoes.  I’ve found that the fire roasted tomatoes have a slightly smokey flavor and are a bit thicker which makes a better consistency.

    • Stuffed Jalapenos

Posted at 6:23 pm by NativeNM, on July 1, 2011

I love the Southwest and every time I walk into the local Price Chopper store they amaze me with all the fresh and dried chiles they carry and it reminds me of home.  In New Mexico, Red and Green Chile are staples of any kitchen, but in the Midwest it’s harder to find those chile comforts of home.  So when I walked in and found these huge jalapenos, they called out to me . . . stuff me, stuff me.  So this is what I put together.
