    • Flamethrower Chile with Dipping Sauce

      Flamethrowers are fried green chile.  Years ago I found a recipe in an issue of Chile Pepper Magazine (August 2001) named Texas Flamethrowers with Dipping Sauce.   It has become one of the first things I make when we get our roasted chile in August, and best when the chile is big and meaty and fresh.  I changed the dipping sauce up a bit to fit our taste buds but otherwise it tastes the same as the original.  This recipe is so simple and easy, yet they disappear as fast as you can make them.  I had to threaten some people in order to take pictures first.

    • Heirloom Tomato and Bread Salad

      The farmers market was the place to be this past weekend.  They had everything you could ever want in fresh fruits and veggies, herbs, and honey.  There was a vendor who had cherry heirloom tomatoes and they were so colorful with different shapes and sizes, I just had to have some.  We bought 2 pints, enough to make 4 salads.  The farmers market is located next door to “The Tasteful Olive” where they have an extraordinary array of flavored Olive Oils and Balsamic Vinegars.  They have the traditional flavors but also unique blends that make an easy vinaigrette.  Whether you have heirloom tomatoes or cherry tomatoes, this will make a great summer side salad to any meal.

    • Okra Gumbo

      For all the okra lovers, this will be a treat.  Okra Gumbo is a side dish that my Mom made every summer.  It reminds me of my childhood, Mom in the kitchen frying okra and the wonderful smell of bacon and tomato.  I’ve never found any recipe that is quite like Mom’s, and believe me I’ve looked.  I’ll have to cook this from memory, I don’t think the recipe is written anywhere and I don’t ever want to forget it.  It’s just that good!

    • Shrimp Egg Rolls

      From time to time I make egg rolls.  I found a recipe in the June 2010 issue of Cooking light (Pan Fried Egg Rolls) that sounded so tasty and easy that I just had to try it.  It was by far the best egg rolls I had ever made, but I found that the filling inside was not enough to make a dozen egg rolls as the recipe suggested.  So I have added some ingredients and tweaked it a bit and I think it now works out to a full dozen.  This is my version of Shrimp Egg Rolls.

      I love the Southwest and every time I walk into the local Price Chopper store they amaze me with all the fresh and dried chiles they carry and it reminds me of home.  In New Mexico, Red and Green Chile are staples of any kitchen, but in the Midwest it’s harder to find those chile comforts of home.  So when I walked in and found these huge jalapenos, they called out to me . . . stuff me, stuff me.  So this is what I put together.
