    • Green Chile Posole with Corn Husk Muffins

      Posole is a New Mexican tradition that some natives serve on Christmas Eve while others serve up a bowl on New Years Eve for good luck.  I’ve always been of the opinion to just have a bowl of posole anytime around the holidays and all will be good.  It’s comforting and reminds me of my New Mexican roots.  Last year I made Blue Corn Posole with dried blue corn and red chile.  This year I’m making a Green Chile Posole with white hominy, green chiles and poblano peppers. And just for fun I am also trying out a new corn husk muffin where you line your muffin pans with strips of soaked corn husks, ladle in the batter and out comes these cute little muffins that look like they grew right out of a corn stalk.  Wishing you all a very Merry Christmas and many blessings for the New Year!

    • Creamy Tomato Soup with Chipotle Gouda Panini

      Who doesn’t love a bowl of creamy tomato soup with a grilled cheese sandwich?  I love to make soup on the weekends when the weather turns cool and we just feel like hunkering down on the couch with a blanket and a book.  Quiet time is so precious anymore when everyone is so busy with their own lives.  This soup is inspired by Chef Paul Prudhomme’s Cream of Tomato Soup.  The recipe calls for fresh ripe garden tomatoes which I would have preferred but at this time of year I will just have to go with canned.   As it turned out the soup was just about as good as it gets.  The Chipotle Gouda cheese melted nicely and had a little kick.  It was a good choice to go alongside this rich and creamy soup.

    • Black Bean Soup

      Black Bean Soup is a rare treat for me.  You see, my husband doesn’t eat beans.  I mean he doesn’t eat ANY beans of ANY kind, therefore I’ve gotten out of the habit of adding beans to our diet.  He definitely did not grow up in NM where beans, chiles  and tortillas are staple ingredients in every kitchen.  It’s getting colder and I’ve been in the mood for a hearty soup.  This recipe is definitely loaded with flavor with a variety of chiles, bacon, tomatoes, and seasonings.  And of course I couldn’t go without my toppings.  I couldn’t resist some crunchy corn tortilla strips with avocado slices and cilantro.  It definitely warmed my soul and lifted my spirits on this cold dreary day.

    • Green Chile Stew

      There’s nothing more comforting to a New Mexican than a bowl of Green Chile Stew.  On our recent visit to Santa Fe, Joe and I sat down at a little sidewalk cafe to share a tamale and a bowl of green chile stew.  It was a rainy day with a chill in the air so a bowl of stew sounded wonderful.  The pork was tender, the chile was hot with big chunks of potato and a hint of cilantro.  It really hit the spot.  Joe mentioned again and again how good that stew was that I took it as a hint that I should make up a pot when we got home.  I started making this recipe years ago when Joe and I lived in Albuquerque and it always reminds me of home.

    • Chili with Sweet Buttermilk Cornbread

      Chili is one of those versatile foods that goes beyond your hearty bowl of chili.  You can make a number of meals just by changing it up.  Add some beans and it’s easy to make a Taco Salad, top your favorite hot dog with cheese and onion and you have a Coney Dog, bake some tater tots or oven fries and you could have Chili Cheese Fries and don’t forget the Frito Pie.    There are just so many good things to do with chili.  And everyone seems to have a preference when it comes to spice and whether to add beans or not.   I like beans in my chili but Joe does not, so I usually don’t put them in the pot of chili, but rather have some on hand to add to my own bowl.  This chili is flavorful but not a hot spicy chili.  If you need the heat, add some hotter chili powder and it will definitely spice it up.  And lets not forget the sweet cornbread with ancho honey butter.  I’m one of those girls who has to have her cornbread, it’s just not the same without it.

      The other night Joe took me out to dinner at a place called Frida’s (named for one of my favorite artists, Frida Kahlo).  It’s an authentic Mexican restaurant that we found via a Groupon, in our area but had not been to.   The menu was filled with wonderful food descriptions that were new to my taste buds.  They used cactus, huitlacoche (a corn fungus which grows naturally on corn), achiote paste, wrapped chicken in Hoja Santa leaves, stuffed poblano peppers with apples, plantains and castillian nuts.  They prepared dishes in a different way than my traditional New Mexican cuisine.  We were treated with appetizers, 4 entree samples and a dessert.  They started by bringing us Caldo Tlalpeno soup.  Upon the first taste we were both impressed by all the flavors and that heat of chipotle that sneaked up on us.  I started taking mental notes on what I was tasting and when we returned home I immediately started looking up this soup.  I found that a lot of recipes included carrots, zucchini, and garbanzo beans.  Frida’s didn’t include them and we loved it so much that I didn’t include them in my version either.  Besides, Joe wouldn’t touch it if I included squash or beans.  They placed the shredded chicken and Mexican cheese on the bottom of the bowl, ladled a broth with garlic, onions, peppers, slices of avocado and chipotle and topped with the tiniest tortilla strips and cilantro.  I added some chopped fresh tomato and a lime wedge.  It was perfect!

      The holiday traditions I remember from growing up in New Mexico are Luminarias which are small paper sacks filled with sand with a small candle inside.  Throughout New Mexico luminarias are a special attraction all over the state and have become so popular that people travel great distances to see the displays.  Another tradition is having a steaming bowl of Posole Stew on Christmas Eve.  Posole comes from the cultures of Native Americans, Mexicans and Europeans and is known as a dish for celebrating life’s blessings.  Posole corn is the hard dry corn kernels otherwise known as hominy.  I still feel connected to New Mexico even though I no longer live there and count my blessings for all the traditions I grew up with.

    • BLT Soup

      The summer of 2010 we met Joe’s family at Yellowstone National Park for a family vacation.  While the brothers and other family members were away on their backpacking adventure, I stayed back with Joe’s mom, Joan.  Joan and I took day trips throughout the park and on one occasion we traveled to Jackson Hole for a day.  We walked the square in awe of all the neat shops, galleries and restaurants.  When lunchtime was upon us we settled on this little place called Trio Bistro.  Everything on their menu looked so enticing.  I couldn’t make up my mind and finally decided on a Panini sandwich which came with a side bowl of soup.   There were 2 or 3 soups to choose from and after careful consideration I picked the BLT Soup which to my surprise was one of the most memorable soups I’ve ever tasted.  The soup was rich with tomato goodness with a dollop of arugula pesto, sourdough croutons and crisp bacon sprinkled on top.  I couldn’t stop thinking about this soup and had to find a way to recreate it.   What I made may not be exactly the same but it’s pretty darn close and if you like tomato soup, you will surely love this one.

    • Tortellini Soup with Meatballs

      I’ve been looking for new soup recipes and came across a Tortellini Soup and a Meatball Soup that sounded so delicious that I decided to combine the two.  This broth based soup is made with tomatoes, spinach, onion and garlic to warm your heart on a cold day. I had no trouble convincing my boys that this was going to be good.  They filled their bowls to the rim and in no time at all it was all gone.  You learn around here to get it while it’s hot or you might not get any at all.  Continue reading →

    • Creamy Potato Soup

      It’s been a bit chilly lately and felt like time to warm up with a bowl of one of my favorite soups.  This recipe will make a stock pot full but get your spoons ready because it won’t last long, at least not at my house.  When Cameron smells the soup it disappears faster than you can say “time to eat”.   It’s creamy and packed with flavor and will warm your heart and make you smile.  Also, it’s a Paul Prudhomme classic so it has to be good!
