      Taqueria cafe’s have become very popular recently with their famous Street Tacos.  There are a couple cafe’s in my area that have tacos for under $3 and I just can’t help craving these tasty tacos.  They are usually made with soft corn tortillas filled with grilled steak with an array of toppings and salsa’s to choose from.  Since I know a little about salsa’s and toppings I’ve been making my own tacos at home and they are equally addicting.  First you need a good skirt steak seasoned with spices and lime juice grilled medium rare.  The steak is so tender it almost melts in your mouth.  The toppings can be anything you choose but I love the flavors of fresh grilled onions, chiles and corn with crumbled cotija cheese and verde salsa.  Let the cravings begin!

    • Baja Fish Tacos with Mango Salsa

      These fish tacos are filled with a beer battered fish and topped with a mango salsa and baja sauce.  Cameron loves these tacos and frequently asks for them.  The fish recipe is borrowed from Cooking Light and seemed perfect for a fish taco.  I tend to pick up whatever fish looks good and at a reasonable price.  This time it was cod, but I have used tilapia and swai fillets and they worked well in the beer batter as well.

    • Tacos with Chicken or Beef

      The best tacos I ever ate were at the local drive-inn in my home town called “The Westerner”.  My sister and I loved these tacos and would make a “Westerner” run whenever we had a taco craving.  The Westerner is no longer there anymore but Kat and I still reminisce about those tacos to this day.  The tacos I made tonight might be called leftover tacos, simply because I had a little leftover ground beef and a couple odd pieces of chicken in the freezer that I didn’t know what to do with.  There wasn’t enough of either one to make a meal so I compromised and made 2 small skillets, one of chicken taco meat and the other ground beef.  I raided the fridge for toppings, finding a little of this, a little of that and in the end we had a taco bar going to fill your own tacos.
