    • Cranberry Orange Scones

Posted at 10:06 am by NativeNM, on November 25, 2011

      Cranberry-Orange-Scones-6

With the holidays around the corner comes the craving for sweets and makes me think of my favorite scones with dried cranberries and orange zest.  They are so easy to make and taste just like they came from a pastry shop. I  don’t usually do breakfast but I will make an exception for a scone to go with my morning coffee.  They are so tasty with an orange glaze drizzled over the top.

    • NM Red Enchiladas

Posted at 9:13 am by NativeNM, on November 22, 2011

This recipe goes out to the Winsor family who have a special place in my heart.   Through the years I have sat at their table while they assembled tortillas, sauce, meat and cheese to make enough enchiladas to feed a whole crew.  I have been tinkering with making my own red enchilada sauce and I think I finally have the right combination of chiles and spice to make a sauce worthy of sharing.  I made the sauce a day ahead and that made the enchiladas fast and easy to assemble the next day.  Continue reading →

    • Breakfast Pizza

Posted at 7:49 am by NativeNM, on November 15, 2011

They say the way to a man’s heart is through his stomach.  Joe would prefer breakfast over any meal.  He’s an early riser and I’m not a morning person so he rarely ever gets a hot breakfast first thing in the morning.   I frequently make breakfast for dinner because I know how much he loves it.  This pizza has bacon, crispy sliced potatoes and eggs over a layer of cheddar cheese that’s good any time of day. • Raspberry Muffins with Lemon Glaze

Posted at 10:37 am by NativeNM, on November 11, 2011

When November arrives, so does my sweet tooth.  I don’t know what it is, maybe it’s the colder weather and wanting an excuse to stay in the kitchen and bake.  The warmth of the oven calls me to the kitchen and keeps me sane during the long winter month’s.  So when I saw the “One Day Sale” for raspberries I ran to the store and stocked up and came home to bake some muffins.  I had an old recipe that I had saved from Cooking Light that  I had always wanted to try.  The recipe definitely is a keeper and I added a lemon glaze because I love the combo of raspberries and lemon.  Whether you like a muffin with your morning coffee or as a dessert this raspberry muffin will definitely satisfy any sweet cravings.

    • BLT Pasta with Roasted Tomatoes

Posted at 9:39 am by NativeNM, on November 8, 2011

Have you ever paired BLT with pasta?  If you haven’t yet, then you’ve got to try this pasta.  This is my go to pasta when I need a pick me up and one of our favorite comfort foods.  There are different versions of BLT Pasta but I like the combination of crisp bacon, roasted tomatoes and pesto.

    • Chile Rellenos

Posted at 9:46 am by NativeNM, on November 4, 2011

We always save some of the biggest and best Hatch Chiles just for chile rellenos.  I like the traditional rellenos stuffed with cheese.  They can be stuffed with almost anything but there’s something about cutting into that batter fried chile and seeing all that cheese ooze out.  You know it’s gonna be good!  And they must have toppings.  We had pico de gallo and chile pequin salsa but you can top yours with whatever you want.  This recipe comes from “The Food of Santa Fe”.

    • Chile Pequin Salsa

Posted at 9:49 am by NativeNM, on November 2, 2011

The pequin chile is a small dried chile that packs quite a punch on the heat scale.  My mouth waters just thinking about it.  It’s so hot that you have to eat it fast and keep eating it because if you stop for just a second you will immediately start feeling the burn.   This pequin salsa is hotter than I’m used to but the flavor is so good I’ve become addicted to it.  Continue reading →

    • Roasted Seasoned Pumpkin Seeds

Posted at 3:25 pm by NativeNM, on October 31, 2011

Happy Halloween!  Hope you all have a fun filled night.  We got a pumpkin to put out on the porch and as always I wait until the last minute carve the pumpkin and roast the seeds.  We waited until last minute because it’s been so warm lately and I wanted the pumpkin to last.  Anyway, Joe got tired of waiting and carved the pumpkin and brought me the seeds.  I love roasted pumpkin seeds so I separated them from the pulp, washed them and set them out on a newspaper to dry.  Glad I did because they turned out crunchy, light and salty and now I can’t stop munching on them.

    • Cider Pork Chops with Apples and Onions

Posted at 9:31 am by NativeNM, on October 28, 2011

Are you tired of apples yet?  Didn’t think so, so here’s one last recipe to share using those fall apples.  There’s just something about pairing pork with apples and onions that tastes so good.  It seemed like perfect timing since I already had the apples and the cider is on display in the grocery stores.  So if you see the cider and want an excuse to buy some, here’s a great recipe to try.  Maybe try one of the flavored ciders, that might be yummy too . . .

    • Apple Butter

Posted at 9:45 am by NativeNM, on October 25, 2011

It’s apple season and since I have apples on hand I had to make apple butter.  I brought out the slow cooker for this one because it’s so easy to fill it and leave it.  I set it up to cook overnight and by morning the smell of apples and spices filled the kitchen.   If you happen to have an apple machine that peels, cores and slices your apples, it really makes the job faster and easier because it’s consuming when doing it by hand.  I made enough to put some in the freezer while keeping a couple jars in the fridge.  I love it on a piece of buttered toast or a biscuit fresh from the oven.
