    • Dark Chocolate Brownies with Sea Salt

Posted at 10:45 am by NativeNM, on July 14, 2017

I cannot in any way take credit for these brownies.  They were created, taste tested and approved from Bakes in Slippers and they are the most delectable brownies I’ve ever made.  One of my favorite things about this recipe is that all the ingredients go together in one pot on top of the stove which makes for very little clean up.  Best of all is the moist chewy texture and dark chocolaty taste.  A sprinkle of sea salt on top just enhances the flavor.  Calling all chocolate lovers, you will not want to miss out on these!

      Chocolate-Chip-Cupcakes-18

When Joe and I got married it was kind of spur of the moment.  After high school he went off to college and I stayed home on the farm.  After his first year of college we decided pretty quick to get married over the summer before he had to go back to school.  It just happened that we married on August 14th and as a young girl I thought it romantic that every Valentines day would be our half year anniversary.  Every Valentines day we kid each other and say “We made it another 6 month’s”.  Well, this Valentines day it will be 31 and a half years, I guess we made it!  I usually make him a special dinner and a something sweet since he is a sweetheart, after all. This year I decided to go big on chocolate and found these lucious chocolate chip cupcakes with a chocolate buttercream frosting from Your Cup Of Cake.  I knew these cupcakes would get his attention and I was pretty happy with them too.

    • Chocolate Zucchini Cupcakes

Posted at 8:30 am by NativeNM, on July 31, 2012

I guess you could say I’m still trying to make use of the zucchini this season.  This summer the zucchini are so plentiful that they are practically giving them away at the farmers market.  I loved the zucchini cupcakes we had a few weeks ago so much that I had to make some more.  However these cupcakes are richer and more decadent with the addition of chocolate.  I found a great recipe from the blog of Two Peas and Their Pod which was my inspiration.  Once again, I substituted natural applesauce for the oil and it made the cupcakes ever so moist.  These cupcakes disguise the zucchini so well you would never even know it was in there, unless I told you of course!
