      May is truly my favorite time of year. The warm sunshine makes me feel so good being outdoors and enjoying nature. Whether it’s going for a walk or watching the roadrunners and quail stop by to feed in our backyard, it’s the simple things that make me happy. This month has gone by way too quickly and now the Memorial holiday is upon us signaling that summer is just around the corner. I hope you all have a festive weekend and enjoy your time relaxing with family, friends or nature. I’ve been craving something cherry and decided to make some Cherry Cheesecake Bars for the weekend. What a great dessert to cap off the weekend! It’s easy to make and a crowd pleaser for any get together!

      Berry-O-11

      This is a pie from my childhood, maybe from yours too!  Only we used cherry pie filling for the topping and it was called Cherry O Cream Cheese Pie.  I remember Mom making this pie for the holidays, and loving that lemony cream cheese filling with syrupy cherries on top.  I froze several packages of raspberries and blackberries over the summer and thought this would be a perfect topping on an old favorite.  Everyone loved the mixed berry version and the coloring was bright and glossy red.  Makes you hate to slice into it . . . almost!

      April is here and finally feeling like the beginnings of Spring.  I just spent a week in NM which looks and feels much more like Spring than we do here in the Midwest.  The trees were leafing and some areas were already in full bloom.  The latter part of the week was filled with warm sunshine which always lifts my spirits.  And time spent with my sister in Albuquerque was the icing on the cake.  She took me thrifting and out to lunch where we sat outside of “Sarafins Chile Hut” on Central sharing a combination plate of Chile Rellenos, Beef Enchiladas and Tacos with Sopapillas and Honey.  I’m here to tell you there’s nothing better than spending a day with your sister and eating real New Mexican food!  It’s going to take me a few days to get back in in sync and try out some new recipes but in the meantime here’s the last of the trio of cupcakes.  A carrot cupcake with a cream cheese center and and topped with a cream cheese frosting.  It’s pretty to eat and perfect for Spring.
