    • Chile Relleno Chimichanga with Chicken

      It’s green chile season here in New Mexico. It’s a special time of year when the chile roasters come out and the smell of roasting chile is in the air. One of my favorite things to make during chile season is chile rellano chimichangas. Traditionally they are stuffed with cheese, however I sometimes I add chicken, steak, or smoked pulled pork. Another idea is to add some farm fresh corn, fresh pico de gallo, or diced sauteed zucchini. I even fry up some pan fried potatoes to add which is always tasty. Whatever you stuff your chile relleno chimi with, it elevates the flavors for each individuals taste. Look for NM Hatch Green Chile in many grocery stores across the US.     • Steak and Potato Skillet Dish

      My husband Joe is a steak and potatoes kind of guy.  I have to be creative sometimes to come up with different ways to serve it so it’s not the same old dish time after time.  This idea came from a pinterest photo that looked like stir fried steak and potatoes.  However when I tried to connect to the recipe it was no longer available so I just went by the picture and took ideas on how to make it my own.  The picture clearly had steak, potatoes, corn and red pepper plus some green herbs that were not distinguishable.  And it also looked like it had some type of sauce, perhaps Siracha or salsa with pepper flakes.  It looked so appetizing I thought I would give it a try.  Instead of making it a wok dish I decided to cook some things on the grill and then add everything together in a cast iron skillet with salsa to bind it together.  It was truly delicious and spicy.

      Zucchini and/or green chile make a great summer side dish when you slice them into bite size strips to resemble french fries.  Dipped in a buttermilk batter and rolled in panko bread crumbs give them a crispy outer texture that tastes so good.  French fries and ketchup may go hand in hand, however zucchini and chile fries taste especially good dipped in salsa or green chile dip. You can’t go wrong there.  Imagine these fries alongside a big juicy burger or a grilled chicken sandwich.  I can assure you they truly taste scrumptious together!

      I may be proud of my Salsa more than any other recipe.  It’s evolved over the years and tastes different based on the tomatoes I have on hand.  Fresh garden tomatoes are the best of course, but there’s only a short period of time when I have them on hand.  So on those occasions when I have a craving and no fresh tomatoes I have to go with canned tomatoes.  I’ve found that the fire roasted tomatoes have a slightly smokey flavor and are a bit thicker which makes a better consistency.
