    • Raspberry Cream Cheese Sweet Rolls with a Lemon Glaze

      I hope you all had a wonderful Christmas with your families. I look forward to hearing about your holiday traditions and delicious food with all the trimmings. One of my favorite things to make around the holidays is sweet rolls. Every year I make a batch of Brioche Cinnamon Rolls as well as something new that we haven’t tried before. Lets face it, sweet rolls are my weakness and the holidays just wouldn’t be the same without a delicious sweet roll on Christmas morning. This year I made two new versions. First up is a sweet roll filled with sweetened cream cheese and raspberries topped with a lemon glaze. It all starts with my favorite brioche dough that never fails. These delicate soft layers almost melt in your mouth while the filling and glaze contrast the sweet and tart flavors. It’s the perfect roll to go with your morning coffee or tea. That said, I think every new version of sweet roll is perfect. I can’t choose, they are all my favorite! While you contemplate these sweet rolls, I hope to tempt you with my next post which features a decadent sweet roll with candied pecans! Happy New Year!

      It’s that time of year again when I get a craving for sweet rolls. It must be the holidays, the chill in the air and a hot drink that make me desire them so much. I like to make them up ahead and freeze individually so that I can pull one out every so often. I love them with my morning coffee, afternoon tea or generally anytime, which is why I have to put them out of sight in the freezer or I might be tempted to have one every day. This years flavor is lemon blueberry, it’s not overly sweet but has a wonderful blueberry flavor with a citrusy lemon glaze. These two flavors just belong together. And the brioche dough is so light and tender, it practically melts in your mouth.

      After 6 years, An Inspired Cook is getting a new look.  There are now more recipe categories with a photo of each recipe to make it easier to find that perfect recipe and visualize how it might look.  I hope you all will come along with me for the next chapter.  Here’s one of my favorites . . . fried pies.  I have to admit they are my guilty pleasure, there I said it!  Honestly I love all pies but I am especially fond of fruit pies. Sweet fried pies which are sometimes referred to as hand pies are filled with any number of fruits and sometimes even cream fillings like chocolate or lemon.  For these cherry pies I opted to used frozen cherries over fresh. Frozen cherries break down when cooked and emit the juice that’s needed to make a glossy pie filling that tastes so good in a fried pie.  Then there’s the lemon glaze, the oh so yummy icing on the cake . . . um I mean pie!!

      Josh and I recently went home to NM for Spring break where the trees were in full bloom. They were so beautiful and vibrant with the colors of light and dark pinks, purples, yellows and white. Here in the Midwest it’s just beginning to feel like Springtime with the lush green grass coming back to life and blossoming flowers on the fruit trees.  It puts me in the mood for a fresh and citrusy treat.  For me, lemons and sunshine go hand in hand and a lemony dessert seems just the thing this time of year.  I thought it was the perfect time to make some Lemony Brownies.  I have to give my sister Kat credit for turning me on to this delicious treat.  She told me they were one of her favorite things and that I would love them . . . I have to say, they are delicious!

      I’ve been in the mood for something sweet, something citrussy, something lemony.   As I was looking for ideas and going through my recipe files I found a recipe for Lemon Pound Cake.  Lemons in the springtime, it was just what I was looking for.  A really moist lemony pound cake dripping with glaze that would taste oh so good any time of day.  But there was one more thing that would make this cake even better.  Some sliced strawberries!     • Raspberry Muffins with Lemon Glaze

      When November arrives, so does my sweet tooth.  I don’t know what it is, maybe it’s the colder weather and wanting an excuse to stay in the kitchen and bake.  The warmth of the oven calls me to the kitchen and keeps me sane during the long winter month’s.  So when I saw the “One Day Sale” for raspberries I ran to the store and stocked up and came home to bake some muffins.  I had an old recipe that I had saved from Cooking Light that  I had always wanted to try.  The recipe definitely is a keeper and I added a lemon glaze because I love the combo of raspberries and lemon.  Whether you like a muffin with your morning coffee or as a dessert this raspberry muffin will definitely satisfy any sweet cravings.
