    • Roasted Tomatoes and Pasta with Burrata

      It seems like every summer I find a new recipe that is so good that I have to make it over and over again.  Well, this is it and it comes from one of my favorite bloggers, Marie at (Proud Italian Cook).  Marie’s Fettucine with Roasted Tomatoes and Burrata looked so appealing and I could only imagine the taste.  I’ve made it 3 times now changing it up with different types of tomatoes and pasta but it always makes the perfect meal.  Joe and I enjoy it with grilled chicken and a sprinkle of bread spices and olive oil.  Sometimes I roast the tomatoes in the traditional way in the oven but when it’s too hot for the oven I have found that roasting the tomatoes in my mini wok works wonderful.  You can use any pan where you can toss the tomatoes as they roast to get the same results.  Here I used cherry tomatos but campari tomatoes work great also, I especially like the Kumato brown tomatoes, they have such a rich dark red color when roasted and makes this dish so appealing.  Ever since I was introduced to Burrata cheese I can’t get enough of it.  It pairs perfectly with roasted tomatoes.  And last but not least a sprinkle of bread spices with olive oil is the perfect seasoning to top it off.  It has a wonderful blend of spices with a bit of salt and chile flakes to enhance the flavors.

      If you didn’t know by now, I love all kinds of salsa!  It’s the perfect time to get those plump red juicy home grown tomatoes that you just can’t get any other time of year.  If you can’t grow your own, farmers market tomatoes are the next best thing.  I found some big meaty tomatoes at the farmers market, and they made the best salsa!  I would have roasted everything outdoors but on this day it was rainy and dreary so I had to make due and roast on top of the gas stove.  It worked out just fine, the house was filled with the aroma of roasting chiles, onions, garlic and tomatoes.  The salsa was terrific on the zucchini fritters and I took care of the rest with a bag of tortilla chips!

    • Grilling Bread Cheese

      Ever had bread cheese?  I hadn’t until now.  I saw a post by Marie “Proud Italian Cook” who used a cedar plank to grill the most delectable bread cheese.  I was hooked at the first photo and I’ve been wanting to try it ever since.  The thing holding me back was that I couldn’t find any bread cheese.  I searched Whole Foods and Trader Joe’s to no avail.  By chance I found some at a market I rarely go to.  I had a cedar plank in the pantry just waiting for the perfect opportunity.  I bought a french baguette and stopped by the Mediterranean bar and picked up some roasted red peppers, sweet piquante peppers, sun dried tomatoes and some fresh cherry tomatoes to go with the cheese.  It’s the perfect appetizer and resembles bruschetta.  Our favorite was the sweet roasted piquante peppers.  Marie’s last words were that she hoped she inspired us to plank some cheese . . . I hope to do the same!

    • BLT Pasta with Roasted Tomatoes

      Have you ever paired BLT with pasta?  If you haven’t yet, then you’ve got to try this pasta.  This is my go to pasta when I need a pick me up and one of our favorite comfort foods.  There are different versions of BLT Pasta but I like the combination of crisp bacon, roasted tomatoes and pesto.
