      The heatwave this summer has lasted longer than I think anyone expected. We’ve experienced more consecutive days in the upper 90’s or topping over 100 degrees for most of July. It’s just too dang hot to turn on the oven or cook on top of the stove. Early on it was sandwiches or salads for dinner, but after a while I started searching for something more. I found some fresh pasta in the refrigerated section of the grocery store; the package directions called for a 3 minute boil. That sounded perfect, I knew just what to do. A creamy parmesan sauce with pesto would taste so good and take only minutes to make. Add a Mediterranean salad and call it a meal. I’ve included a couple more variations that I think you will enjoy as well.

      It’s been awhile since I’ve added a recipe.  My kitchen has been under construction since mid May which we estimated to complete over a couple month’s.  Sometimes well made plans don’t always work out though.  We fell behind schedule but hope to have the total remodel completed by the end of August.  Joe and I are doing a lot of the work ourselves with a little bit (actually big) help of a contractor who is helping to make it all happen.  I haven’t had my stove hooked up until recently but without a sink to clean up, I’ve been making do with a more simple menu, meals that don’t require a stove or extra dishes.   I shouldn’t complain though, it’s summer after all and most days I can grill outdoors.  This weekend I was inspired by a recipe from “Fork in the Kitchen” , a Burrata Pesto Tomato appetizer that was so visually appealing, I had to give it a try.  I tweaked the recipe so that it required no cooking and it turned out oh so good!  Once you taste the creamy burrata cheese with freshly made pesto and sun-dried tomatoes layered on soft french bread it’s hard to stop!

    • Grilled Veggie Panini with Balsamic Glaze

      It’s been gorgeous weather this week and I decided to pick up some veggies and make panini’s for dinner.  I sliced and assembled my veggies and went outside to set up the grill.  It was sunny and in the upper 70’s, just perfect outside but I noticed that the wind was picking up.  I drizzled my sliced veggies with olive oil and sprinkled with salt and pepper and began grilling.  Everything was going well but the wind was just wicked.  About the time I finished, I realized that big clouds were rolling in.  I had just enough time to let the grill cool and get everything inside before it turned dark and started pouring rain.  The veggies turned out perfect and I piled them together between sourdough bread with some fresh mozzarella cheese, spinach pesto and a drizzle of balsamic glaze.   It was just the perfect combination!

    • BLT Pasta with Roasted Tomatoes

      Have you ever paired BLT with pasta?  If you haven’t yet, then you’ve got to try this pasta.  This is my go to pasta when I need a pick me up and one of our favorite comfort foods.  There are different versions of BLT Pasta but I like the combination of crisp bacon, roasted tomatoes and pesto.

      Pesto can be made from many herb choices.  I have a small herb garden of basil, chives, parsley, thyme, sage and rosemary, but not enough to make pesto.  I always have spinach on hand and when I make pesto I start with a spinach base and add whatever herbs I want to enhance the flavor.  This time I’ve added some basil leaves.  Pesto adds flavor to pizza, soup, sandwiches or pasta.  I use pesto in many recipes so I thought it deserved it’s own post.  Continue reading →
