      Here’s another Blackstone Griddle recipe that took only a few minutes to make. The prep work was minimal and in no time I had a couple of Philly Cheesesteaks ready. I am having fun with this new griddle which heats so fast and much hotter than a grill. It doesn’t have a temperature gauge so I ordered an infrared thermometer laser gun to instantly read the temp of the griddle. It’s a must have to monitor the temperature.
      These cheesesteaks are more traditional with thinly sliced steak, sliced white American cheese, onions, mushrooms and Anaheim chiles seasoned with a simple Verde seasoning. Joe and I don’t like green bells so we always substitute a green chile of some variety in place of the green bell peppers. Feel free to make it your own as I do. Whatever you enjoy on your cheesesteak is easy to add or eliminate ingredients based on your taste buds. And toasting the steak rolls on a griddle is also a bonus, the toasted buttered roll has that slight crunchy texture but is still soft. The steak and veggies were so tender and everything tasted so good with the melted cheese holding it all together. Don’t have a griddle . . . just make these cheesesteaks in a cast iron skillet or a wok.

    • Herb Butter with Green Chile

      Looks sinful huh!  Actually it doesn’t seem that bad after the Kookamonga burger challenge Joe and I witnessed in Memphis.  We went to this little joint called Kooky Canuck where they make these monster burgers filled with 4, 6 or 8 pounds of ground beef alone.  We watched while a young couple (ironically they were from KC) attempted the 2 person challenge of eating a burger with 6 pounds of meat loaded with an additional 6 pounds of cheese, lettuce, tomato, onion and bun.  If they completed the challenge in 1 hour or less they ate for free.   I knew they were doomed when it was announced that the burger was a mere  18,000 calories.  If you could see the eyes on the young girl, you would know she was about to freak out!  So while we may be in a butter coma for the evening, I think we’ll survive.  As long as we don’t do this very often.  Once a year or so I treat my guys to a steak dinner with all the trimmings and Father’s day seemed like the perfect time.  Firing up the grill for some grilled corn on the cob and a medium rare rib-eye steak is about as good as it gets, but add a little herb butter and you’ve got something extra special.  You certainly don’t have to add green chile, but it sure does spice it up.  I planted some herbs earlier in the Spring that are coming along quite nicely so I snipped some chives, parlsley and thyme plus I had some cilantro in the fridge. Along with some salt and green chile this butter makes any meal special.  Just don’t do it too often!

      My favorite food holiday by far is Cinco de Mayo!  This holiday celebrates the Mexican culture and heritage with festivals and parades but mostly with great Mexican food.  While I don’t need an excuse to eat Mexican, I always look forward to making something special to celebrate the day.  I’m making quesadillas filled with marinated steak, thin sliced potatoes and poblano chiles.  It’s Muy Bueno!  Paired with guacamole and salsa makes this quesadilla a party for your taste buds!  Happy Cinco de Mayo all!
