      I know that candied nuts are usually thought of as a winter treat but they can be a great snack anytime.  I was looking for something crunchy and sweet to put in a salad when I remembered an old recipe for candied pecans.  The recipe called for sugar, cinnamon and a splash of vanilla but an inspiration hit me when I started gathering the ingredients and found my jar of Vanilla Sugar in the pantry.  Vanilla sugar would pack a lot more flavor than a splash of vanilla and I could only imagine how it would smell and taste.  If you’ve ever made vanilla sugar with split and scraped vanilla beans then you know how aromatic it can be.  And as the walnuts begin to roast in the oven you might be reminded of the cinnamon roasted nuts you’d find at a farmer’s market or a fall festival.  These turned out to be an irresistible treat.  They provided a sweet crunch to our salad as well as a dessert topper for a scoop of ice cream.  Next time I will have to hide any leftovers as no one could resist grabbing a couple every time they walked by.

    • White Chocolate Macadamia Nut Cookies

      The wait is over!  My homemade Vanilla Extract and Vanilla sugar that I started in August is finally ready.   I waited 8 weeks and it’s finally time to try it out.  I found just the recipe, White Chocolate Macadamia Nut cookies.  I love white chocolate, which isn’t really chocolate at all, but that’s beside the point.  And I have several cans of Macadamia nuts that Joe and I brought back from Hawaii saving for a special occasion.  I think unveiling the Vanilla Extract and Vanilla Sugar is pretty special.  The cookies turned out pretty good too!

    • Homemade Vanilla Extract and Vanilla Sugar

      In just a few short month’s fall will be here and it’s time to get ready for fall baking.  I’ve always been a fan of Vanilla Sugar but always hated paying for it.  Recently I watched “Kelsey’s Essentials” on The Cooking Channel.  She was getting ready for holiday baking and making some holiday treats that she used homemade vanilla extract and vanilla sugar in her recipes.  So I started researching and found with just a little prep work I could make my own in about 2 month’s. That would put me at about the middle of October which is perfect, so I set off for Penzey’s to get some vanilla beans.  The only other ingredients I needed was some sugar and some Vodka.  So simple!
