    • Blackened Chicken Sandwich with Fried Green Tomatoes

      I made this chicken sandwich a couple weeks ago with a big red steakhouse tomato and it was fantastic.  The flavors of grilled blackened chicken with smoked gouda cheese and chipotle mayo made it special.  Joe and I loved it so much I promised to make it again soon.  I went to the farmers market to pick up a tomato for the sandwich but changed my mind when I saw these big ole green tomatoes sitting out on display.  Why not try something different . . .  so I changed it up a bit by adding a fried green tomato slice for a tangy twist.  For those who love fried green tomatoes, this sandwich will not disappoint, but if you are a traditionalist, by all means go with a big slice of summer red.  You can’t go wrong either way.  And if you can stand the heat of the oven, roast some potato wedges with a drizzle of olive oil, salt and your favorite herbs.  It makes the best side kick to any sandwich!

      Cameron is a kid of few words and rarely makes any requests for dinner.  Recently he was out to eat and ordered a chicken salad wrap that he described as having big chunks of apples with dried cranberries, kind of sweet with lots of dressing.  He asked if I could make it sometime and I told him I’d give it a try.  Not having tasted it myself, I was left to translate his description into a recipe that would live up to his expectations.  I searched several blogs to find a dressing that would go with what I had planned.  The one that stood out was a slightly sweet dressing with a hint of citrus from “Cookbook Junkies“.  My contribution was adding some sweet and spicy pecans to tempt the taste buds and give a little added crunch.   I had a crusty artisan sourdough loaf that I sliced and toasted for sandwiches and also picked up some spring greens for a salad. We all thought it tasted pretty amazing and was a success according to Cam which I guess is really all that matters!

      This is the time of year that I start to get cabin fever.  I’ve had my fill of winter, boy has it been a long cold winter, and I’m ready to move on to spring, how about you!  I’m ready to move on from the soups and stews that we all cook up in the winter and on to something with a little more spice. Something you can hold in your hand or eat with a fork instead of a spoon.  I found a package of frozen crawfish tails at the store the other day and thought a Po Boy sure would be good.  Then I went to pick up some lettuce and tomato to dress the sandwich when I found some slightly green tomatoes.  They were starting to ripen but still green on top and firmer than a ripe tomato.  That just made my mouth water thinking about a fried green tomato alongside crispy crawfish tails and remoulade sauce.

    • BEAST an Open Faced Breakfast Sandwich

      I’ve never been one to be hungry in the morning and usually skip breakfast, however I do enjoy my morning cup of coffee and on occasion a scone or breakfast bread.  On the other hand, my son Josh makes a big breakfast every day and is a master at making omelettes and breakfast sandwiches.  Recently he put together an open faced sandwich that left my mouth watering so I set about recreating it.   I call it a BEAST or bacon, egg, avocado, spinach, and tomato.  It’s one satisfying breakfast sandwich.

      It’s been gorgeous weather this week and I decided to pick up some veggies and make panini’s for dinner.  I sliced and assembled my veggies and went outside to set up the grill.  It was sunny and in the upper 70’s, just perfect outside but I noticed that the wind was picking up.  I drizzled my sliced veggies with olive oil and sprinkled with salt and pepper and began grilling.  Everything was going well but the wind was just wicked.  About the time I finished, I realized that big clouds were rolling in.  I had just enough time to let the grill cool and get everything inside before it turned dark and started pouring rain.  The veggies turned out perfect and I piled them together between sourdough bread with some fresh mozzarella cheese, spinach pesto and a drizzle of balsamic glaze.   It was just the perfect combination!

      I love to watch “Eat Street” on The Cooking Channel . . .  they showcase the best street food that can be found from vendors that prepare any and all kinds of delicious foods from vending trucks.  One episode that stood out in my memory was Cross Cut Sliders.  I can’t remember the exact way they prepared them, only that they sandwiched mini burgers between cross cut fries and there was a dripping melting cheese involved.   It looked ooey gooey good!  Since I have some fresh “Hatch” green chile on hand it sounded too good not to make some sliders with green chile and melting queso.  They are too messy for finger food, you’ll definitely need a knife and fork for these guys.

      My son Josh is an adventurous eater.  He loves to try new things, sometimes things that I would never imagine.  I love to take him out to eat because you never know what he’s going to order.  He rarely orders the same thing twice but when he finds something good he wants to recreate it at home or rather wants me to recreate it.  Recently we went to a little cafe that made the most amazing panini sandwiches.  He ordered the vegetarian Portabella Panini and just raved about how good it was.  After a bit of thought I came up with a close version of the cafe’s.  They listed a sun dried tomato pesto and feta cheese on their panini while I used spinach pesto and fresh mozzarella.  Either way it’s one tasty panini!

    • Santa Fe Burger

      I call this burger the Santa Fe, loaded with cheese, green chile, grilled onions, tortilla strips and guacamole.  Red Robin used to offer a similar burger that had pepper jack cheese and a whole roasted poblano.  It was my favorite thing on the menu and when they discontinued it I was determined to make my own version.  I love big burgers with layers of flavor in every bite.  I think I’ve found it in this burger!  It also reminds me of New Mexico where you will find the best green chile and cheese burgers on earth!

    • Jalapeno Cheese Steak

      One of Joe’s favorite sandwiches is the “Fireball” from PepperJax Grill.  They serve an awesome Philly Cheese Steak sandwich and if you order the Fireball you get a sandwich loaded with jalapenos along with the juice.  I thought I’d give it a try to try and recreate this tasty sandwich. I cooked it outside on the griddle which made this so easy.  It was almost like a stir fry, adding each item to the griddle for a quick toss in butter and olive oil.

    • Cuban Pork Panini Sandwich

      Leftover Cuban pork makes the best Cuban pork panini sandwich.  Sometimes called a “Cubano” it’s traditionally a ham and cheese sandwich with pickles, mustard and Cuban pork on a crusty french bread.  Joe and I agree that there’s something about the tart dill pickle that makes this sandwich.  I didn’t want too much bread so I sliced the loaf diagonally to make smaller sandwiches.  One panini was perfect for me but the guys each had two.
