I love to watch “Eat Street” on The Cooking Channel . . . they showcase the best street food that can be found from vendors that prepare any and all kinds of delicious foods from vending trucks. One episode that stood out in my memory was Cross Cut Sliders. I can’t remember the exact way they prepared them, only that they sandwiched mini burgers between cross cut fries and there was a dripping melting cheese involved. It looked ooey gooey good! Since I have some fresh “Hatch” green chile on hand it sounded too good not to make some sliders with green chile and melting queso. They are too messy for finger food, you’ll definitely need a knife and fork for these guys.
If you are lucky enough to get some “Hatch” chile roasted, this is what it looks like. Once it’s been roasted and steamed you can peel them under running water.
As you can see most of the charred peel came right off. I seeded them as well and plan to use half for my queso and cut the rest into pieces that fit my sliders.
I divided 1 pound of ground beef into 8 (2 ounce) burgers. I made a queso and set up my cross cut fries to bake (2 per slider). I used frozen cross cut fries which baked up crisp and tasty.
Season your sliders with your favorite seasoning and grill about 4 minutes on each side.
Put them together by placing the burgers between cross cut fries with a big slice of green chile and a big spoonful of melted queso.
Cross Cut Sliders with Queso and Green Chile
1 pound Ground Beef, divided into 8 (2 ounce) patties
16 large frozen Cross Cut Fries
Queso Cheese, recipe follows
2 Hatch Green Chile, roasted, peeled, seeded and cut into 8 pieces
Salt and Pepper or your favorite Hamburger Seasoning
Bake frozen cross cut fries according to package directions. Form mini hamburger patties, salt & pepper. Grill on a hot grill about 4 minutes on each side. Place the grilled patties between cross cut fries and top with green chile and queso.
Serves 2 – 3
Queso Blanco
8 ounces Velveeta Queso Blanco, cubed
2 Hatch Green Chile, roasted, peeled, seeded and chopped
1/4 cup Red Onion, chopped
1/4 cup Tomato, chopped
1/4 cup Half and Half
Saute onion in a heated saucepan with a drizzle of olive oil. Add cubes of Velveeta Queso Blanco and stir to melt. Stir in half and half, green chile and tomato.
