    • Pepper Cheese Steak Hoagie

      Recently Joe and I ate at a new restaurant called “Dodge City Distillery” for a bite of lunch.  No, it’s not in Dodge City and I don’t think it’s a chain although I’m not sure about that.  Anyway, I ordered this cheese steak sandwich that came with melting cheese, roasted peppers and Tabasco infused onions.  They used big strips of steak in the sandwich which had been seasoned and grilled to perfection.  I fell in love at first bite and knew it was something I wanted to recreate in my own kitchen.  I think my sandwich came pretty close to the sandwich I ordered there.  It’s not your traditional cheese steak by any means but it is a great sandwich loaded with a whole lot of spice and flavor.

    • Creamy Tomato Soup with Chipotle Gouda Panini

      Who doesn’t love a bowl of creamy tomato soup with a grilled cheese sandwich?  I love to make soup on the weekends when the weather turns cool and we just feel like hunkering down on the couch with a blanket and a book.  Quiet time is so precious anymore when everyone is so busy with their own lives.  This soup is inspired by Chef Paul Prudhomme’s Cream of Tomato Soup.  The recipe calls for fresh ripe garden tomatoes which I would have preferred but at this time of year I will just have to go with canned.   As it turned out the soup was just about as good as it gets.  The Chipotle Gouda cheese melted nicely and had a little kick.  It was a good choice to go alongside this rich and creamy soup.

    • FGT Burgers

      Is there anything more southern than Fried Green Tomatoes?   It’s become our tradition to have them at least one time every summer.  This year I splurged and we had them twice but first I want to introduce you to my new favorite burger, the FGT Burger.  It comes on a bun with 1/3 pound ground beef topped with provolone cheese, bacon, a slice (or two) of fried green tomatoes and for those who like mayo, a seasoned mayo special for you.  I’ve never cared for mayo on a burger, a true mustard girl all the way, but my guys insisted on having a seasoned mayo on top of their FGT burger.  The tomato is the star of this burger, I don’t know why we didn’t have them sooner!

    • Shrimp Po’ Boys with Remoulade Slaw

      Recently I came across two separate recipes that I felt had to go together.   One was Paul Prudhomme’s classic Barbecued Shrimp and the other was a Remoulade Slaw straight from the new Cooking Light magazine.  Instantly I knew these two would go together to be the perfect Po’ Boy sandwich.  But this isn’t your typical Po’ Boy, in that it isn’t deep fried, but lightly seasoned and pan fried in butter for a delicate crisp shrimp that is encased in a french roll with a spicy remoulade slaw and sliced cherry tomatoes.  I made this one for Joe who loves the spicy food of Louisiana.

    • Pretzel Sliders with Cheddar Cheese Sauce

      Are you a fan of pretzel rolls?  They have become the big craze lately and remind me of the soft pretzels that you dip into cheese sauce or slather with mustard.  Josh wanted a cheese dip for the pretzel rolls and out of that came the idea of sliders with a cheddar cheese sauce.  These are fun to make and even more fun to eat.  I’m thinking these would be a big hit at open house grad parties.  These were originally supposed to be green chile cheese sliders but then Josh piped up again and said “Why not top it with jalapenos too”!  He was quite the inspiration!

    • Albuquerque Turkey Sandwich

      I was first introduced to the Albuquerque Turkey Sandwich in the 80’s at a restaurant called “Christie Mae’s”.  Yes, it is in Albuquerque and when we lived there I would go with co-workers on our lunch hour and get a half Albuquerque Turkey Sandwich with a cup of Creamy Chicken and Green Chile Soup and a side of Honey Cornbread.  Everything was so delicious!   I’ve always loved this sandwich with it’s smoked turkey, roasted green chile, guacamole and melted Monterey Jack cheese.  It’s really simple so get out your panini presses or your cast iron skillets and in no time you’ll have one tasty sandwich.

    • Barbecue Pulled Pork Sandwich

      Barbecue is taken very seriously where we live.  Kansas City is famous for it’s barbecue and there are plenty of great places to choose from if you’re ever in the area.  Our favorite is Oklahoma Joe’s, they have the absolute best burnt ends on this earth and no I don’t have a clue how they do it.  Any day of the week you could expect to stand in a long line running out the door just to get some of these tasty smoked meats.  By no means do I claim to be an expert on barbecue but I do love to eat it.  I would describe our KC barbecue sauce as a sweet heat.  It’s a bit on the spicy side with sweet tones behind it.  Just recently we watched Anthony Bordain “No Reservations” Kansas City and on this episode he ate barbecue at many of the local favorites. Joe and I sat there and drooled as they ate burnt ends, ribs, pulled pork and brisket.  I tell you, I wanted barbecue so bad I could hardly stand it.  I went to the freezer and pulled out a pork shoulder roast to thaw and the next day set about getting a dry rub, marinade and sauce ready for a pulled pork roast.  I slow cooked it for an entire day and as the hours passed by the aroma became intoxicating.  Every couple hours I would take a big fork and turn the roast over and when 8 hours had passed, the fork went in and the roast fell apart.     • New Mex Sloppy Joes

      Did any of you notice the Tex Mex Sloppy Joe Sandwich posted by “The Homesick Texan” a few weeks ago?  The photo alone made my mouth water.  Most Sloppy Joes are ketchup based and sweetened with brown sugar but this Joe was put together with a tomato sauce that was more spicy than sweet.    I altered the spices and changed up the chile a bit to give it a more New Mexican flare.  I can’t tell you how much we enjoyed the flavors we experienced eating this savory sandwich.

    • Green Chile and Cheese Stuffed Burgers

      You’d better come hungry because this is the ultimate burger with 2 patties of ground beef glued together with cheese and green chile.   You may not see it now but within this burger lies a volcano of cheese and green chile just waiting to erupt.  I found a recipe for a stuffed burger in Chile Pepper Magazine 1996 and ever since then my family has hounded me to make them again and again. The original recipe wrapped a couple strips of bacon around the patties so if that sounds good, go for it.  I know that for me, I can only eat half, between the burger itself and all the toppings that are piled on it’s a lot for any one person but it’s sure fun to try.  Continue reading →

    • Pesto Burgers

      Nothing beats a good burger don’t you think.  I like to layer a burger so that when you take that first bite you can taste all the different flavors that are going on.  This pesto burger has balsamic roasted tomatoes that will burst in your mouth both literally and figuratively. You will need plenty of napkins because it will drip down your chin good . . . with arugula pesto and roasted tomato juiciness.  The mess will be worth it,  I promise.
