    • Lime Ice Cream with Candied Hatch Green Chiles

      It’s Hatch season and I just picked up my first green chiles of the season.  I’ve had this recipe in mind for such a long time and waiting on chile season to try it out.  I have a cookbook from The Museum of New Mexico Foundation, “Dulce, Desserts from Santa Fe Kitchens”.  In it there is a recipe for lime ice cream with caramelized green chiles.  Every time I flip through it I wonder how this combination will taste.  You might think it sounds like an odd combination but I can vouch that it’s really quite tasty.  Think of candied jalapenos paired with cream cheese. . . yummy huh!  Well, this sweet and hot combination tastes like frozen key lime pie with some chile jelly on top.  It’s sweet with a back heat that tempts your taste buds and leaves you satisfied.  Now you could go with a mild green chile, but the hot chile is tamed considerably by the sweet syrup.  And to top it off I added some crystallized lime zest which added another layer of sweetness.  I think you’ll be pleasantly surprised!

    • Peach Dumplings with Vanilla Cream Sauce

      July marks the beginning of peach season and I for one couldn’t be happier.  Sweet summer peaches make the best desserts, at least I think so.  We made a trip to the farmers market yesterday where a vendor was roasting whole peaches.  Once roasted they would sprinkle sugar or cinnamon over the top with a drizzle of honey.  Joe had to have one and actually let me share in a bite or two.  The peach was warm and sticky and tasted delicious.  After devouring that peach there was no way we were walking out of there without a basket of peaches to take home.  Peach dumplings were an obvious choice as they are easy to make and fun to eat.  I wanted to try something other than the traditional vanilla ice cream on the side so I added a warm vanilla cream sauce.  I can honestly say I’ve never tasted a more delectable peach filled pastry.

    • Vanilla Sugar Glazed Walnuts

      I know that candied nuts are usually thought of as a winter treat but they can be a great snack anytime.  I was looking for something crunchy and sweet to put in a salad when I remembered an old recipe for candied pecans.  The recipe called for sugar, cinnamon and a splash of vanilla but an inspiration hit me when I started gathering the ingredients and found my jar of Vanilla Sugar in the pantry.  Vanilla sugar would pack a lot more flavor than a splash of vanilla and I could only imagine how it would smell and taste.  If you’ve ever made vanilla sugar with split and scraped vanilla beans then you know how aromatic it can be.  And as the walnuts begin to roast in the oven you might be reminded of the cinnamon roasted nuts you’d find at a farmer’s market or a fall festival.  These turned out to be an irresistible treat.  They provided a sweet crunch to our salad as well as a dessert topper for a scoop of ice cream.  Next time I will have to hide any leftovers as no one could resist grabbing a couple every time they walked by.

    • Cranberry Jam Granola Bars

      As promised I’m testing out some new recipes for granola bars.  This granola bar is baked and has a cranberry jam filling that really puts it over the top.  I really love this bar for the flavors that come through and the surprisingly chewy texture.  I was almost certain that baking it for such a lengthy period would produce a hard crunchy exterior but it turns out not to be the case.  They are time consuming, mostly the prep time making the jam and the time it took to bake the granola but it’s time well spent when you take that first bite.  I can’t wait to try out some other dried fruits but cranberry is definitely one I want to make again.

      I am not shy about how much I love sorbets.  Sorbets are so refreshing and take little time out of your day to make.  I’ve been a little obsessive lately trying different fruity combinations and this is definitely one of the best!!  I am partial to citrus flavors and the fusion of grapefruit, lime and margarita is hard to beat.  Joe and I kept stopping by the freezer for “just a taste” and it was gone in no time.  So I made a smaller batch and poured into popsicle molds to see how they would freeze.  It was like a frozen margarita on a stick, a fun adult treat that we will be enjoying a lot this summer!

      Josh and I recently went home to NM for Spring break where the trees were in full bloom. They were so beautiful and vibrant with the colors of light and dark pinks, purples, yellows and white. Here in the Midwest it’s just beginning to feel like Springtime with the lush green grass coming back to life and blossoming flowers on the fruit trees.  It puts me in the mood for a fresh and citrusy treat.  For me, lemons and sunshine go hand in hand and a lemony dessert seems just the thing this time of year.  I thought it was the perfect time to make some Lemony Brownies.  I have to give my sister Kat credit for turning me on to this delicious treat.  She told me they were one of her favorite things and that I would love them . . . I have to say, they are delicious!

      A few warm days is all I need to get in the mood for Springtime.  Any day with sunshine and above 50 degrees is a day to be outdoors and watch the Robins that have just returned home.  It’s a sure sign that Spring is just around the corner when the trees begin to bud and my outdoor herbs start to break through the ground.  I think of lemons in Springtime with the colors of sunshine.  Some fresh squeezed lemonade would be refreshing but what I really wanted was some sorbet.  Along with a bag of lemons, I found some bright red strawberries to add to the mix for a Strawberry Lemonade Sorbet.  A frozen treat that was not too tart and not too sweet.

    • Pumpkin Cinnamon Rolls

      The pumpkin puree is coming out of the freezer.  I’m fixing a big batch of brioche dough with my homemade puree and pumpkin spices to make pumpkin cinnamon rolls which are all the craze this season.  My family loves cinnamon rolls so these pumpkin and spice rolls really appealed to me.  It makes for an easier process when you make the dough ahead of time and refrigerate.  The dough will keep up to a week in the fridge until you’re ready to put the rolls together.  The dough needs to rest at room temperature for about 30 minutes allowing the dough to relax enough to shape and roll out.  A mixture of sugar and spice gives the rolls a wonderful filling.  The aroma of pumpkin and cinnamon filled the kitchen with holiday cheer.  I put half aside in the freezer for the upcoming holidays!

      Time has flown so quickly, I can’t believe it’s almost the end of October.  For me, it signals the time to turn on the oven and start baking.  My family loves pumpkin desserts and in the past I’ve always used canned pumpkin which is perfectly fine.  But this year I decided to try making my own pumpkin puree just for the fun of it.  Looking online to see what varieties would be suitable, it appeared most bakers preferred small pumpkins which are supposed to be a bit sweeter for pies and desserts.  I found it to be a fairly easy process, just scoop, bake, peel and puree.  I can’t wait to test it out with some sugar and spice to see how it tastes.  So what do you think, are these pumpkins cute or what?

    • Rich Chocolate Ice Cream

      This became my indulgence over the summer, home made ice cream!  I’ve never been one to eat ice cream by itself, but rather alongside cake or pie, that is until I started making my own.  This summer I made so many quarts of ice cream I can hardly count, but one of my favorites was this dark rich chocolate ice cream.  I love the pure chocolate taste which is creamy and melts in your mouth like smooth pudding.  I found this ice cream stands on it’s own and you won’t need anything else to satisfy those chocolate cravings.
