    • Chorizo Black Bean Soup

Posted at 8:35 am by NativeNM, on May 24, 2013

      Chorizo-Black-Bean-Soup-11

I love chorizo but chorizo didn’t always like me.  Recently I found a local smoked meat market that makes their own chorizo. It is much lower in fat and doesn’t cook out an excessive amount of grease the way some do while maintaining the spicy flavor.   First thing I wanted to make was soup.  I imagined a healthy and tasty black bean soup loaded with beans, chiles and corn and now a chorizo sausage that was lighter with very little fat.  It was terrific if I do say so myself!  And the best thing of all was I didn’t have to share.  Those who won’t touch beans don’t know what their missing!

    • Chipotle Pulled Pork

      Chipotle-Pulled-Pork-6

As it nears the end of May my mind wanders to the beginning of summer barbecue.  Pulled pork is one of our favorites, it’s fall apart tender and makes the best sandwiches.  Plus you can spice it up so many ways.  This time I went with a chipotle rub and sauce to flavor the pork and it was fantastic.  If you love that smoky spicy flavor of chipotles, you’ll love this barbecue.  We had our fill of sandwiches and then tried a new pulled pork pizza that I’ll be sharing soon.

    • Braised Beef Stew with Root Vegetables

Posted at 8:37 am by NativeNM, on April 23, 2013

      Braised-Beef-12

Just when I think old man Winter is gone for good, he laughs at me with a cold blast of wind and rain that chills me to the bone.  So I decided to make up a hearty bowl of braised beef stew with root vegetables to warm up.  I spent an afternoon prepping the meat and veggies and as they simmered on the stove, the aroma and warmth it brought was a welcome feeling.  And with such a large pot of stew I would have leftovers for a couple days.  A little break from the kitchen would give me some extra time to pick up a book and enjoy some “me” time!

    • Smoked Sausage Jambalaya

Posted at 8:47 am by NativeNM, on April 12, 2013

      Jambalaya-7

One of my favorite meals to make is Jambalaya.  This one pot meal is easy to put together but doesn’t lack for flavor.  Andouille may be the traditional sausage in Jambalaya but I find that the smoked sausage holds it own surrounded by spices, onions, garlic and wild rice.  We usually break off a piece of crusty baguette to go alongside and call it a meal.

    • Green Chile Posole with Corn Husk Muffins

Posted at 8:30 am by NativeNM, on December 21, 2012

Posole is a New Mexican tradition that some natives serve on Christmas Eve while others serve up a bowl on New Years Eve for good luck.  I’ve always been of the opinion to just have a bowl of posole anytime around the holidays and all will be good.  It’s comforting and reminds me of my New Mexican roots.  Last year I made Blue Corn Posole with dried blue corn and red chile.  This year I’m making a Green Chile Posole with white hominy, green chiles and poblano peppers. And just for fun I am also trying out a new corn husk muffin where you line your muffin pans with strips of soaked corn husks, ladle in the batter and out comes these cute little muffins that look like they grew right out of a corn stalk.  Wishing you all a very Merry Christmas and many blessings for the New Year!

    • Black Bean Soup

Posted at 9:09 am by NativeNM, on November 2, 2012

Black Bean Soup is a rare treat for me.  You see, my husband doesn’t eat beans.  I mean he doesn’t eat ANY beans of ANY kind, therefore I’ve gotten out of the habit of adding beans to our diet.  He definitely did not grow up in NM where beans, chiles  and tortillas are staple ingredients in every kitchen.  It’s getting colder and I’ve been in the mood for a hearty soup.  This recipe is definitely loaded with flavor with a variety of chiles, bacon, tomatoes, and seasonings.  And of course I couldn’t go without my toppings.  I couldn’t resist some crunchy corn tortilla strips with avocado slices and cilantro.  It definitely warmed my soul and lifted my spirits on this cold dreary day.

    • Steak Fingers and Gravy

Posted at 8:35 am by NativeNM, on October 23, 2012

Steak Fingers and Gravy are one of those comfort foods I grew up with.  One of the things I love about food is that it brings back memories or creates new ones.  For me, steak fingers always remind me of my Dad.  He was a meat and potatoes kind of man and loved his steak fingers.  And as with most  meals on the farm, we always had potatoes and gravy alongside.  Rarely do I cook the way we did back then but once in awhile I crave the old comforts of home.

    • Green Chile Stew

Posted at 8:27 am by NativeNM, on October 5, 2012

There’s nothing more comforting to a New Mexican than a bowl of Green Chile Stew.  On our recent visit to Santa Fe, Joe and I sat down at a little sidewalk cafe to share a tamale and a bowl of green chile stew.  It was a rainy day with a chill in the air so a bowl of stew sounded wonderful.  The pork was tender, the chile was hot with big chunks of potato and a hint of cilantro.  It really hit the spot.  Joe mentioned again and again how good that stew was that I took it as a hint that I should make up a pot when we got home.  I started making this recipe years ago when Joe and I lived in Albuquerque and it always reminds me of home.

    • Shrimp and Grits

Posted at 9:12 am by NativeNM, on August 24, 2012

One of my favorite destinations is Charleston, SC, partly because of the charm and hospitality of the city and people, but also because of their cuisine.  One of my favorites is Shrimp and Grits.  I love the creaminess of the grits paired with the spicy shrimp and gravy.  I’m not sure if they call it sauce or gravy, either way it sure is good.  I rarely come across grits here in the Midwest other than the instant grits packets you find in the local grocery stores but recently I was in Trader Joe’s and came across a package of stone ground grits.  I picked up a package envisioning what I would do and came up with this. . .

    • Biscuits and Fried Green Tomato Gravy

Posted at 8:57 am by NativeNM, on July 27, 2012

Are you ready for a second helping of fried green tomatoes?  This time I’m going to Chef Paul Prudhomme and his recipe for “Kentucky Fried Tomatoes with Cream Gravy”.  He places a fried green tomato slice over an English muffin and smothers it with a cream gravy that is out of this world.  I was in the mood for biscuits and have to thank Joe’s brother Chuck for his biscuit recipe which turns out great every time.  So pull out those leftover green tomato end pieces, flour mix and seasoning blend and get ready for some of the best biscuits and gravy you’ll ever have.
