    • Pork Tamales with Verde Salsa

      For years I’ve wanted to make tamales but was intimidated by the process and work that goes into it.  I’ve always heard it’s a job that works best with several people to help prep, assemble and package.   Since I don’t have extended family around to help me with this mission, I asked Joe if he would give up a weekend to help me.  He was happy to help since he loves tamales.  I went all out and made three different kinds of tamales, just in case Joe never wanted to do this again.  This labor  took 3 days to complete but I can now say I have home made tamales in the freezer.  I think if I give Joe some time he may come around and help me again someday.  We’ve been considering some sweet filled tamales next time around, but for now let me tell you about the first batch made with Pork and a Verde sauce with Hatch green chiles and cheese.

    • Shrimp and Grits

      One of my favorite destinations is Charleston, SC, partly because of the charm and hospitality of the city and people, but also because of their cuisine.  One of my favorites is Shrimp and Grits.  I love the creaminess of the grits paired with the spicy shrimp and gravy.  I’m not sure if they call it sauce or gravy, either way it sure is good.  I rarely come across grits here in the Midwest other than the instant grits packets you find in the local grocery stores but recently I was in Trader Joe’s and came across a package of stone ground grits.  I picked up a package envisioning what I would do and came up with this. . .

    • Dan Dan Noodles

      I came across an old recipe from Cooking Light that I have been wanting to try for awhile.  Being unfamiliar with Dan Dan Noodles, I was a little skeptical on how it would turn out but to my surprise it was quite good.  There are a lot of flavors going on in the cooked pork and the cucumbers provide a crunch and flavor that compliments this dish.  Paired with a side salad this was an easy tasty meal.

    • Grilled Flank Steak with Veggie Kabobs

      It’s been a long hot summer and hard to start up the grill when it’s this hot.  But today I’m going to brave the heat and grill my favorite flank steak and veggie kabobs.  I marinated the steak overnight in a ginger and soy marinade which smells and tastes so good.  This marinated flank steak was cooked over high heat just to medium rare and will almost melt in your mouth.  I set aside just enough marinade to brush over the veggie kabobs and sliced onions.  Continue reading →

    • Biscuits and Fried Green Tomato Gravy

      Are you ready for a second helping of fried green tomatoes?  This time I’m going to Chef Paul Prudhomme and his recipe for “Kentucky Fried Tomatoes with Cream Gravy”.  He places a fried green tomato slice over an English muffin and smothers it with a cream gravy that is out of this world.  I was in the mood for biscuits and have to thank Joe’s brother Chuck for his biscuit recipe which turns out great every time.  So pull out those leftover green tomato end pieces, flour mix and seasoning blend and get ready for some of the best biscuits and gravy you’ll ever have.     • Fall Off The Bone Ribs with Rotel Barbecue Sauce

      The most succulent tender ribs come from slow roasting.  At least that’s my conclusion based on many attempts to get that tender fall off the bone ribs.  I started with a dry rub inspired by Bobby Flay then sealed the ribs in a foil wrap and slow roasted for several hours.  I placed the wrap on a broiler pan and filled the bottom pan with water which worked as a steam bath.  I made a sauce using the new Rotel tomato sauce and rub seasonings.  The sauce had a kick that complimented the ribs perfectly.  We had a meal of ribs, roasted corn and tomato salad so there was plenty to eat but I swear we just couldn’t get enough of these ribs.  Every time we picked up a rib the tender meat would just fall apart.

      There’s nothing more New Mexican than having a burrito smothered in green chile sauce.  Thick green chile sauce overflowing with melted cheese creates the most savory and mouth watering New Mexican cuisine.  It’s just one of those things on my list that I can’t live without.  I need to make room to refill my freezer with this year’s crop of Hatch green chile so I’ve been making a lot of favorites lately.  This is definitely one of the best.

    • Greek Nachos

      I’ve always wanted to try Greek Nachos.  They look so tempting with the toasted pita triangles piled high with seasoned meat, salty kalamata olives and feta cheese, tomatoes, onions and that yummy tzatziki sauce. I chose to go with ground pork since ground lamb was nowhere to be found on the day I went shopping.  Not to worry, it turned out to be a great alternative. And the tzatziki sauce was so good, straight from the blog of Kalyn’s Kitchen.

    • Smoked Sausage Skillet Supper with Fig Dijon Sauce

      For a fast and tasty supper try this smoked sausage dish with roasted red potatoes and grilled sweet onions.  This is an easy go to meal when you’re in a hurry.  Smoked Sausage is so good sliced and pan fried with a little dijon mustard on the side.  But I thought maybe a little sweeter sauce might add to this skillet dish and looked to see what I had on hand.  When I found the jar of fig preserves I knew I had something to work with.  So I started with that and built around it with some dijon mustard, vinegar, soy sauce and a little honey.

    • Raspberry Chipotle Steak Salad

      It was a  perfect weekend for firing up the grill and being outdoors.  I think everyone in the neighborhood was feeling it.  You could smell the grillin in the air and we were no exception.  At the farmer’s market I found fresh lettuce and had to have a bunch of the spring mix.   I also picked up some red potatoes for a roasted potato salad that served as my side dish that I plan to share soon.  I put up a skirt steak in the freezer a couple weeks ago and thought it would be perfect to layer over top of my salad mix.  A chipotle glaze would taste good but how to flavor it?   I was on the fence between raspberries and mangoes but the raspberries won out when I found a large pack of fresh berries on sale.  This sauce turned out to be versatile in that I could set some aside to make a salad dressing with plenty left over to glaze the steak.
