    • Grilled Steak or Chicken Burrito Bowl

      I love big ole burritos stuffed with everything.  Sometimes I take the time to make a big batch of them that will last us for several days.  And sometimes I wrap them up to freeze for an easy meal later on.  I’ve been wanting to try a burrito bowl which is so popular these days.  I must admit it is much easier to just layer a bowl with my favorite meat and toppings but I missed the tortilla so I toasted one to have on the side.  This is literally a bowl of my favorite things starting with grilled steak and chicken that is spicy and flavorful.  More goodness comes with a scoop of fresh guacamole, salsa verde, roasted corn salsa, seasoned black beans, sour cream, Oaxaca cheese and cilantro lime rice.  Most everything was made from scratch but there are short cuts you can take to make the prep a little easier.  There is a visual appeal of a burrito bowl that you don’t get with a traditional burrito that is smashed together once you roll it up.  So the question is, do you prefer steak or chicken or both?

      Zucchini and/or green chile make a great summer side dish when you slice them into bite size strips to resemble french fries.  Dipped in a buttermilk batter and rolled in panko bread crumbs give them a crispy outer texture that tastes so good.  French fries and ketchup may go hand in hand, however zucchini and chile fries taste especially good dipped in salsa or green chile dip. You can’t go wrong there.  Imagine these fries alongside a big juicy burger or a grilled chicken sandwich.  I can assure you they truly taste scrumptious together!

      May the luck of the Irish be with you!  Here in Kansas City there are always celebrations taking place in honor of St. Patrick’s day.   You might see green water flowing through our “City of Fountains” or witness the largest St. Patrick’s parade anywhere.  Also one of my favorite bands,”The Elders” return home for their annual “Hoolie” concert.  It’s a festive time to be sure! While others cook a more traditional Irish feast, I’m going with something fun.  I’m pretty sure nachos are not something you would find on a true Irish menu but it’s something that is festive and fun to eat. It starts with thin sliced potatoes baked crisp in the oven.  These chips become the foundation topped with a tangy Irish cheese sauce and loaded with anything you want.  As you can see, I like a lot of toppings!

      I’m still on an Aussie kick, this time I’m having summer shrimp tacos with a fresh jicama salsa and jalapeno cream.  The medley of colors, textures and flavors are so appetizing starting with the salsa which is made from fresh ingredients with a bite of crunchy jicama.  And topped with sour cream with roasted jalapenos to add a bit of spice.  Everybody loves finger foods that you can pick up with your hands to eat.  These were no exception literally being wolfed down in minutes.  Portion control just went out the window!

    • Hummus and a Layered Mediterranean Dip

      I’ve never been a huge hummus fan but my guys all seem to love it.  They are always picking up a tub of hummus and pairing it with pita chips or crackers and they always pack a tub of it on their backpacking trips. They say it’s healthy and is rich in good fats and protein so who am I to deny them this healthy snack.  Since I’m trying to be a little more health conscience I thought I might try to make some homemade.  It was such an easy process, just load all your ingredients into a food processor and pulse until you get the right consistency.  It turned out really good but I had way more hummus than I had expected so I scooped out about a cup of the hummus and made a layered Mediterranean dip.

    • Roasted Eggplant Salsa

      This year one of my goals is to try to incorporate more vegetables into our diet.  Over the summer I found that I could get the guys to eat more veggies by roasting or grilling them.  The key was to season or pair them with a pesto or sauce to make the flavors more appealing.  Some years ago we had a Turkish roasted eggplant dip that everyone enjoyed, but no one can seem to remember what it was called other than it had eggplant, chiles and tomatoes.  When I started researching it the first thing that came up was Baba Ghanouj which clearly wasn’t what we had in mind.  Josh thought it might be Ezme but it is described as a tomato and pepper salad or condiment.  So in the end, I made up a roasted eggplant salsa with chiles, tomato and garlic.  It didn’t taste the same as the Turkish dip we remembered but it was very good with pita chips. Also try it with some flatbread and grilled chicken, it is fantastic!

      If you didn’t know by now, I love all kinds of salsa!  It’s the perfect time to get those plump red juicy home grown tomatoes that you just can’t get any other time of year.  If you can’t grow your own, farmers market tomatoes are the next best thing.  I found some big meaty tomatoes at the farmers market, and they made the best salsa!  I would have roasted everything outdoors but on this day it was rainy and dreary so I had to make due and roast on top of the gas stove.  It worked out just fine, the house was filled with the aroma of roasting chiles, onions, garlic and tomatoes.  The salsa was terrific on the zucchini fritters and I took care of the rest with a bag of tortilla chips!

    • Hatch Corn Fritters and Zucchini Fritters

      August means it’s “Hatch” season.  The first green chile have arrived but I haven’t found any roasters set up yet so I just picked up a few to get started.  The first thing I wanted to make was some salsa so I went to the farmer’s market to pick up fresh tomatoes.  But as usual I get caught up in all the fruits and veggies and picked up some zucchini and corn too.  I had recently been drooling over a post from Kevin at “Closet Cooking” for Jalapeno Popper Corn Fritters  which gave me the idea to make fritters with the Hatch green chile.   I tweaked the recipe a bit and made a zucchini version too.   I topped them with some Fire Roasted Salsa and Flamethrower Sauce.  They were quite filling and really tasty, enough to make a whole meal out of them.

      Every summer when the corn and tomatoes start showing up at the farmers market I make a batch of black bean and corn salsa.  Nothing tastes better along side a good grilled steak or chicken or as a topper for your favorite taco.  Plus I could eat it all day with nothing but tortilla chips.  It’s completely vegetarian and packed with everything good for you.  I found these little cast iron half pint kettles at a Lodge Factory Outlet in the little town of South Pittsburg, TN, near the Alabama border.  What a store. . . they have almost anything you could dream of, if you’re into cast iron.  A little room at the back has some great bargains on many of the cast iron skillets, dutch ovens some other items listed having a scratch or blemish.  I couldn’t find anything wrong with them and came home with a large 12 inch skillet, a griddle/grill and these mini kettles.

      I love this time of year when I can grill outdoors.  So many things to grill and everything always tastes so good.  One of my easy go to meals is grilled chicken.  This time I’m trying out a soy sauce and ginger marinade for the chicken that will pair with a fresh pineapple salsa.  Pineapple salsa brightens up grilled chicken with it’s citrusy fresh taste and looks beautiful on a plate.  This recipe will make up to six pieces of chicken.  Since it’s just Joe and I most days, I grilled what we wanted for one meal and saved the rest to grill the next.
