    • Georgia O’Keeffe’s Pecan Butterballs

      For as long as I can remember I’ve been fascinated by Georgia O’Keeffe’s story. She is renowned for her landscape and floral paintings in and around Ghost Ranch. When she first visited in 1934, the land was owned and occupied by a dude ranch, however she was offered a stay in a cottage on the property. It’s said that Georgia found solace at Ghost Ranch and spent her summers there painting until 1949 when she convinced the owner to sell her a parcel of land where she made it her home. Ghost Ranch is one of my favorite places on earth and I can see why she would embrace this beautiful landscape. Each time we visit I get a sense of traveling in her footsteps and viewing the scenery that she painted so long ago. I chose my blog header for the breathtaking landscape that is fondly known as “Georgia O’Keeffe country. I remember standing there in awe trying to capture the beauty before me, not knowing that Joe would take that photo.
      This post was originally going to be a recipe for Mexican Wedding cookies, however I came across Georgia’s recipe for Pecan Butterballs which looked and sounded very similar. Georgia opted for honey in place of powdered sugar for these pecan filled cookies. I was intrigued by her cookies and that search lead me to a different story. I found that a collection of Georgia O’Keeffe’s recipes were auctioned by Sotheby’s and sold in 2020. There is an image of the recipe card that she hand wrote for her Pecan Butterballs. Her pecan butterball cookies are perfect with a cup of afternoon tea. They also make a nice treat to share over the holidays. Hope you enjoy!

    • Freezer Cookie Dough All Year Long

      For the past year or so I’ve been making cookie dough and putting the dough balls into the freezer to bake whenever I please. Once they are frozen they are ready to go, and all you have to do is heat the oven and place as many frozen dough balls on a baking sheet to pop in the oven for approximately 13 – 15 minutes. You can even mix and match cookies as long as they can be baked on the same temperature. I wish I had started doing this years ago, it would have saved so much time and energy. Some cookies turn out better than others though. Through trial and error I’ve found that the best freezer cookies that I have tried so far are Brown Butter Salted Caramel Snickerdoodle Cookies, White Chocolate Macadamia Nut Cookies and most recently Halloween Candy Cookies. They taste just as delicious as if you had made them fresh the same day. Making Freezer Cookies makes sense especially for busy Mom’s. You never know when you will need a batch of cookies for a school function, a potluck or holiday gathering. It’s so easy and no one will ever know you baked them straight out of the freezer, unless you tell them.

    • Publix Bakery Calypso Cookies

      I made these cookies for a good friend of mine.  On a recent trip to Florida she found these delectable Calypso cookies at Publix Bakery which is a popular chain in the South.  They are oatmeal based with coconut and pecans.  She wanted to recreate these cookies and asked if I would give it a try.  After researching online I found many copycat recipes with which to work with.  Now I have to say I’m not really a coconut person and usually avoid it but after trying these cookies I was pleasantly surprised.  The flavors are well balanced without the strong coconut flavor that usually overwhelms me.  I think they taste pretty close to the original Publix cookies.  Let me know what you think!

      My husband Joe is a cookie monster!  He loves all cookies, but especially ones that have a contrast between sweet and salty.  These snickerdoodles are very soft and gooey with melting caramel bits, rolled in cinnamon and sugar and lightly sprinkled with grey sea salt.  Made with brown butter gives off a nutty aroma as well as a taste that is hard to describe other than heavenly.  Beware the addiction that follows after taking your first bite.  It’s hard to resist just one more!

      I’ve been craving cookies, maybe more like I crave baking cookies.  The kitchen is my sanctuary on cold winter days with the oven warming and the aroma of fresh cookies baking.  And what’s better than a warm cookie and a glass of milk to lift your spirits.  I decided I’d just go with what I could find in the pantry since I didn’t want to go to the store.  When I spotted the oats, my decision was made . . . Oatmeal Cookies.
