If you love S’mores, you have to try these S’mores blondie bars. They are so decadent, loaded with big chunks of chocolate bars, marshmallow creme and cookie dough. And if that’s not enough, how about some roughly chopped pecans and graham crackers sprinkled over top. S’mores are great for all occasions but they seem to be especially popular for the 4th of July. While the celebrations this year won’t be quite the same, Joe and I still plan to grill some hamburgers and go for a hike somewhere. I made these cookies for a good friend of mine. On a recent trip to Florida she found these delectable Calypso cookies at Publix Bakery which is a popular chain in the South. They are oatmeal based with coconut and pecans. She wanted to recreate these cookies and asked if I would give it a try. After researching online I found many copycat recipes with which to work with. Now I have to say I’m not really a coconut person and usually avoid it but after trying these cookies I was pleasantly surprised. The flavors are well balanced without the strong coconut flavor that usually overwhelms me. I think they taste pretty close to the original Publix cookies. Let me know what you think!

Pecan pie may not be the healthiest thing to eat but it also happens to be one of the tastiest things on earth, so I give it a pass around the holidays. I just don’t think the holidays would be the same without a slice of pecan pie. There’s just something about the creamy buttery sugar filling combined with the nutty pecan that makes your mouth water. I always take my time and savor every bite because I know it will be another year until I taste it again. I like to pick out all the biggest and best pecans, lay them out one by one on top of the pie to make a pretty circular pattern. It’s fun to put together and gets a lot of “Wow’s” when you set it on the table!
