Brown Sugar Pecans are a tasty treat. They are easy to make and great to have in the pantry for a quick snack. I love to put a few into a salad, they provide that crunch and sweetness that adds so much flavor to any salad. Another idea is to split a banana in half, grill it for a minute then add the pecans and drizzle honey over the top. They will keep fresh for a couple weeks provided you place them in a tightly sealed container. Sometimes they don’t last that long though.
Give the pecans jut a couple minutes to cool. They should slide easily off the aluminum lined cookie sheet.
Brown Sugar Pecans
1/2 pound raw Pecans
1/4 cup Unsalted Butter
1/4 cup plus 2 tablespoons Brown Sugar
1 teaspoon Vanilla
Pam Cooking Spray
Preheat oven to 325 degrees.
Combine butter, brown sugar, and vanilla in a saucepan over medium low heat. Stir ingredients with a wire whisk for just a minute or two. As soon as the mixture has melted and become a syrup, pour over the raw pecans. Make sure to coat all pecans and spread them in a single layer on an aluminum foil lined cookie sheet coated with Pam cooking spray.
Bake for 20 minutes, stir after 10 minutes. Let cool for a few minutes and transfer to a tightly sealed container.
