Avocados are one of those foods that taste so good but are also healthy for us. They contain many nutrients plus monounsaturated fats which promotes lower cholesterol. So eat all the avocados you want guilt free, I say! If you love guacamole like I do, try it on your favorite sandwich, burger, salad and mexican foods, or hand me a bag of chips and I’m good.
I like fresh ingredients in my guacamole, and I love color.
Take a fork and mash up the avocado. Add the garlic, onion, jalapeno, cilantro and tomato and gently fold them in.
Spritz with lime juice and salt to taste. If you are making guacamole ahead of time and want to keep it from turning brown, place lime slices on top of the guacamole and seal in an airtight container.
Or if you just can’t wait, pull out the chips and get started.
Fresh Guacamole
2 Avocados
2 tablespoons Red Onion, finely chopped
1 large clove Garlic, minced
1 large Jalapeno, stemmed, seeded and finely chopped
2 tablespoons Cilantro, roughly chopped
2 tablespoons Tomato, chopped
Spritz of Lime Juice
Salt to taste
Cut avocado in half and remove seed and peel. Mash avocado with a fork, add onion, garlic, jalapeno, and cilantro. Gently mix together. Spritz with lime juice and salt to taste.
Note** If not using immediately, store in a tightly sealed container with lime slices placed on top of the guacamole to prevent browning.
