      Ever have that feeling that you’re craving something but you just don’t know what that something is!  That happens to me all the time, wanting something salty . . . or something sweet. . . or something comforting but nothing particular in mind.  Sometimes you have no further to look that in the freezer.  That’s where I found the blueberries that I had packaged up last summer when they were abundant and so good.  What was I saving them for?  I could think of nothing specific so I pulled out a small package and decided they would be perfect for a batch of scones.  I topped them with a cinnamon streusel that gave them a little bit of crunchy sweetness.

    • Sweet Rolls with Fig and Walnuts

      If you love fig newtons you are going to love these sweet rolls.  Peel away the layers of this sweet brioche dough to find a sticky fig walnut paste that reminds you of the newtons you always loved.  The maple icing over top goes well with the fig flavors and makes your fingers sticky delicious!  I have to send a Thank You to Joan for the figs as she always sends home a treat whenever we visit.  My guys thought the figs were up for grabs and as I started seeing them disappear I set aside a small amount to make sweet rolls.  Getting started on the brioche dough a day ahead made the rest a breeze.

    • Brioche French Toast with Caramelized Banana and Pineapple

      This is by far the best french toast I’ve ever had!  It reminded me of the time Joe ordered french toast in Hawaii and they brought out a whole loaf of Hawaiian bread cut into thick slices of french toast and served with coconut syrup.  It was massive and he loved every bite.  I’m not a coconut fan but I do love tropical so I went with a banana pineapple topping and macadamia nut sprinkles. A drizzle of maple syrup tastes really good over the top, but not too much because you don’t want to mask the flavors of the caramelized fruit.  I’m good for nothing in the morning so this was served for dinner but who wouldn’t love a plate of this tropical inspired french toast served any time of day!

      Do you remember the series of “Beautiful Cookbooks”?  I find myself flipping through the pages just to drool over the beautiful pictures, but I also find many recipes that I would love to try.  I ran across this recipe in the “Southwest Beautiful Cookbook” and I was intrigued.  The picture looked like a margarita in a jar and I wondered if it would taste as good as I imagined.  As it turned out it was a sinfully sweet version of a classic margarita that I could spread on a cracker, biscuit or muffin.

    • Banana Chocolate Chip Muffins

      Here’s a heads up for those of you with kids, you love them, you teach them, you send them off into the world, but sometimes they come back.  As in my case with my oldest son Josh who spent his first year away from home while going to college.  He’s back for a few weeks until he has a new place lined up and in the meantime he’s showing me a few things he’s incorporated into his daily life.  He’s become quite the breakfast maker, getting up early to make a big breakfast to start his day.  Well, I’m impressed, this kid of mine actually did listen to a thing or two I taught him about food and nutrition.  “So what can I pick up for you at the grocery store” I asked him  He rattled off several things he wanted including lots of bananas. So I picked up 2 big bunches of bananas and guess what, they turned ripe in a hurry and he didn’t eat them like he thought he would.  So what to do with all those ripe bananas, well . . . make muffins, that’s what I do.  And in the fridge I remembered some semi sweet chocolate bars and chocolate chips that I had leftover from another recipe so I decided to throw them into the mix too.

    • Biscuits and Fried Green Tomato Gravy

      Are you ready for a second helping of fried green tomatoes?  This time I’m going to Chef Paul Prudhomme and his recipe for “Kentucky Fried Tomatoes with Cream Gravy”.  He places a fried green tomato slice over an English muffin and smothers it with a cream gravy that is out of this world.  I was in the mood for biscuits and have to thank Joe’s brother Chuck for his biscuit recipe which turns out great every time.  So pull out those leftover green tomato end pieces, flour mix and seasoning blend and get ready for some of the best biscuits and gravy you’ll ever have.     • Berry Smoothie

      As the weather turns warmer we find ourselves craving something cold to drink.  Joe and I enjoy a cold smoothie after a long walk or after working in the yard.   These smoothies are very low in calories but they will satisfy your taste buds and replenish your energy.  I found this recipe in an old Cooking Light magazine and it’s so simple with only four ingredients yet it’s packed with flavor.  If you’re a fan of lemon and berries you’ll definitely love this.

    • Eggs Benedict with Chipotle Hollandaise

      Happy Mother’s Day to all the mom’s out there.  If I could choose this would be my favorite breakfast to wake up to on Mother’s day.  Eggs Benedict with a hint of chipotle.   I wanted to make these as easy as possible so I took a page out of “Simply Recipes” blog and made the hollandaise in a blender which turned out great.  She also gives instructions on poaching eggs which proved to be helpful as I have not had great experience in the past with the poaching process.  I chose a sourdough english muffin with smokey bacon instead of the traditional canadian bacon and topped it with spinach leaves and sliced avocado before adding a poached egg and chipotle hollandaise sauce.  Continue reading →

    • Buttermilk Pancakes with Blueberry Sauce

      Breakfast again . . . actually it’s pancake night at the Cook house.  It’s been a long week and I needed quick go to meal that was easy but filling.  What’s not to like about a big stack of buttermilk pancakes with some warm blueberry sauce drizzled over the top.   I have Kat to thank for the buttermilk pancake recipe, it’s the best!  And the blueberry sauce is lightly sweetened with a hint of lemon in the background.  Continue reading →

    • Breakfast Burritos for Two

      Breakfast burritos are my favorite thing for lunch believe it or not.   Since I don’t do breakfast when normal people do, I sometimes treat Joe and myself to a breakfast burrito on the weekends.  We sometimes add bacon or ham, but today we had our traditional burrito with country potatoes, creamy scrambled eggs with cheddar and my homemade salsa.  Come hungry, these burritos will leave you feeling full and satisfied no matter the time of day.
