      Happy Cinco de Mayo all!  I love any excuse to eat Mexican food.  Recently when Joe and I were in  Kauai we walked over to a little restaurant called Monico’s Taqueria where we shared a plate of Steak Nachos.  It was a simple nacho platter with spicy marinated steak and melted cheese with Chile de Arbol salsa on the side.  After 2 weeks of Hawaiian food I was having withdrawal pangs for Mexican food and for me this was heaven on a plate.  The  arbol salsa goes perfectly with steak but I wanted more options.  So I added some more toppings which I hope you will enjoy.  Continue reading →

    • Grilled Pork Chops with Avocado Corn Pico

      Want to dress up an ordinary pork chop . . . add some cheese and pico de gallo with avocado and corn.  It will definitely make your taste buds happy.  Add a baked potato or a side green salad and you’ve got a complete meal.  My family used to cringe when I made pork, they complained it was dry and didn’t have any flavor.  Since then I’ve found ways to make pork more tender and juicy.  For myself, I’ve found that if I soak the pork in a brine of water, salt and sugar for at least an hour it makes a much more tender pork chop.  I seasoned them with a tasty salt blend and added a topping of pico de gallo with avocado and corn.  There were no complaints or any leftovers either for that matter.

    • Baja Fish Tacos with Mango Salsa

      These fish tacos are filled with a beer battered fish and topped with a mango salsa and baja sauce.  Cameron loves these tacos and frequently asks for them.  The fish recipe is borrowed from Cooking Light and seemed perfect for a fish taco.  I tend to pick up whatever fish looks good and at a reasonable price.  This time it was cod, but I have used tilapia and swai fillets and they worked well in the beer batter as well.

    • Chile Pequin Salsa

      The pequin chile is a small dried chile that packs quite a punch on the heat scale.  My mouth waters just thinking about it.  It’s so hot that you have to eat it fast and keep eating it because if you stop for just a second you will immediately start feeling the burn.   This pequin salsa is hotter than I’m used to but the flavor is so good I’ve become addicted to it.  Continue reading →

      Avocados are one of those foods that taste so good but are also healthy for us.  They contain many nutrients plus monounsaturated fats which promotes lower cholesterol.  So eat all the avocados you want guilt free, I say!  If you love guacamole like I do, try it on your favorite sandwich, burger, salad and mexican foods, or hand me a bag of chips and I’m good.

    • Roasted Corn Salsa

      I discovered corn salsa at Chipotle Mexican Grill.  For those who have a Chipotle’s in your neighborhood, you know how good their burritos and tacos are.  You build your own burritos or tacos with your choice of meat, beans, rice, and salsa.  The corn salsa adds something that I have tried to recreate many times and have finally found the ingredients that I think come as close to Chipotle’s as possible.  The secret is in the corn.  There’s a hint of sweetness that I’ve found comes from roasted corn.  Grilling brings out the sugars in the corn that gives it that special taste.  Try this corn salsa on any burrito, taco or enchilada and it will soon become a favorite topper.

    • Flamethrower Chile with Dipping Sauce

      Flamethrowers are fried green chile.  Years ago I found a recipe in an issue of Chile Pepper Magazine (August 2001) named Texas Flamethrowers with Dipping Sauce.   It has become one of the first things I make when we get our roasted chile in August, and best when the chile is big and meaty and fresh.  I changed the dipping sauce up a bit to fit our taste buds but otherwise it tastes the same as the original.  This recipe is so simple and easy, yet they disappear as fast as you can make them.  I had to threaten some people in order to take pictures first.

    • Salsa Verde

      Have I mentioned how much I love salsa.  Well, I do!  An I don’t feel guilty because I make it myself without preservatives, I can control the salt content and I use fresh ingredients.   Salsa Verde is always a prelude to enchiladas or burritos because I make a big batch, save some for dipping and the rest will make a sauce to smother enchiladas or burritos.  Inspired by Bobby Flay who makes a similar salsa.

    • The Salsa

      I may be proud of my Salsa more than any other recipe.  It’s evolved over the years and tastes different based on the tomatoes I have on hand.  Fresh garden tomatoes are the best of course, but there’s only a short period of time when I have them on hand.  So on those occasions when I have a craving and no fresh tomatoes I have to go with canned tomatoes.  I’ve found that the fire roasted tomatoes have a slightly smokey flavor and are a bit thicker which makes a better consistency.
