      It was a  perfect weekend for firing up the grill and being outdoors.  I think everyone in the neighborhood was feeling it.  You could smell the grillin in the air and we were no exception.  At the farmer’s market I found fresh lettuce and had to have a bunch of the spring mix.   I also picked up some red potatoes for a roasted potato salad that served as my side dish that I plan to share soon.  I put up a skirt steak in the freezer a couple weeks ago and thought it would be perfect to layer over top of my salad mix.  A chipotle glaze would taste good but how to flavor it?   I was on the fence between raspberries and mangoes but the raspberries won out when I found a large pack of fresh berries on sale.  This sauce turned out to be versatile in that I could set some aside to make a salad dressing with plenty left over to glaze the steak.

    • Blackberry Muffins

      Every time I go through the “Wilton” isle at the craft store I see all these pretty baking cups for muffins or cupcakes.  There are so many choices of shapes and colors and I want one of each.  I went to the grocery store in search of an idea for muffins and found the blackberries on sale so I picked up a couple cartons and headed to the craft store to find the perfect muffin cups.  I thought these bright pinkish cups looked like an open flower and thought they would be perfect for my muffins.  When I started filling them with batter I found out they were too large to fit into my muffin pan.  So, I placed some in ramekin cups and the others on a cookie sheet.  The baking cups were stiff enough to hold up without a mold, however they did spread out a bit more than the ones baked in the ramekins.  I had hoped they would look like a flower in bloom but I what I had in my head and what actually baked up were two different things.  In the end I couldn’t be happier with how they tasted, they were so moist and berry delicious.

    • Berry Smoothie

      As the weather turns warmer we find ourselves craving something cold to drink.  Joe and I enjoy a cold smoothie after a long walk or after working in the yard.   These smoothies are very low in calories but they will satisfy your taste buds and replenish your energy.  I found this recipe in an old Cooking Light magazine and it’s so simple with only four ingredients yet it’s packed with flavor.  If you’re a fan of lemon and berries you’ll definitely love this.

    • Eggs Benedict with Chipotle Hollandaise

      Happy Mother’s Day to all the mom’s out there.  If I could choose this would be my favorite breakfast to wake up to on Mother’s day.  Eggs Benedict with a hint of chipotle.   I wanted to make these as easy as possible so I took a page out of “Simply Recipes” blog and made the hollandaise in a blender which turned out great.  She also gives instructions on poaching eggs which proved to be helpful as I have not had great experience in the past with the poaching process.  I chose a sourdough english muffin with smokey bacon instead of the traditional canadian bacon and topped it with spinach leaves and sliced avocado before adding a poached egg and chipotle hollandaise sauce.  Continue reading →

    • Albuquerque Turkey Sandwich

      I was first introduced to the Albuquerque Turkey Sandwich in the 80’s at a restaurant called “Christie Mae’s”.  Yes, it is in Albuquerque and when we lived there I would go with co-workers on our lunch hour and get a half Albuquerque Turkey Sandwich with a cup of Creamy Chicken and Green Chile Soup and a side of Honey Cornbread.  Everything was so delicious!   I’ve always loved this sandwich with it’s smoked turkey, roasted green chile, guacamole and melted Monterey Jack cheese.  It’s really simple so get out your panini presses or your cast iron skillets and in no time you’ll have one tasty sandwich.

    • Ultimate Steak Nachos

      Happy Cinco de Mayo all!  I love any excuse to eat Mexican food.  Recently when Joe and I were in  Kauai we walked over to a little restaurant called Monico’s Taqueria where we shared a plate of Steak Nachos.  It was a simple nacho platter with spicy marinated steak and melted cheese with Chile de Arbol salsa on the side.  After 2 weeks of Hawaiian food I was having withdrawal pangs for Mexican food and for me this was heaven on a plate.  The  arbol salsa goes perfectly with steak but I wanted more options.  So I added some more toppings which I hope you will enjoy.  Continue reading →

    • Barbecue Pulled Pork Sandwich

      Barbecue is taken very seriously where we live.  Kansas City is famous for it’s barbecue and there are plenty of great places to choose from if you’re ever in the area.  Our favorite is Oklahoma Joe’s, they have the absolute best burnt ends on this earth and no I don’t have a clue how they do it.  Any day of the week you could expect to stand in a long line running out the door just to get some of these tasty smoked meats.  By no means do I claim to be an expert on barbecue but I do love to eat it.  I would describe our KC barbecue sauce as a sweet heat.  It’s a bit on the spicy side with sweet tones behind it.  Just recently we watched Anthony Bordain “No Reservations” Kansas City and on this episode he ate barbecue at many of the local favorites. Joe and I sat there and drooled as they ate burnt ends, ribs, pulled pork and brisket.  I tell you, I wanted barbecue so bad I could hardly stand it.  I went to the freezer and pulled out a pork shoulder roast to thaw and the next day set about getting a dry rub, marinade and sauce ready for a pulled pork roast.  I slow cooked it for an entire day and as the hours passed by the aroma became intoxicating.  Every couple hours I would take a big fork and turn the roast over and when 8 hours had passed, the fork went in and the roast fell apart.     • Cameron’s Chicken Enchilada Casserole

      Sometimes you just need comfort food and for my youngest son Cameron, these enchiladas remain his favorite.  When my boys were little I would make up a special batch for them without the green chile because I thought it would be too hot for them.  Well, Cameron spoke up one day and said where’s the green chile in my enchilada, I want chile too!  Knowing that he couldn’t handle the heat of the chile, I switched out a can of Cream of Chicken for a Cream of Celery and after that the bits of celery became “green chile”.  He was happy and ate every bite.  Now he’s all grown up and is a “chile addict” just like the rest of us but he still asks for the Chicken Enchiladas with “the soup”.  So since he’s having a birthday in a few days and just because he’s my baby I’m going to make his favorite enchiladas.  This one’s for you Cam!

    • Tomato Mozzarella Salad

      The Tomato Mozzarella Salad is sometimes known as a Caprese Salad or Margherita Salad.  Doesn’t matter what you call it, it’s one of the freshest and appetizing salads around.  I’m tempted to pick up a fresh mozzarella ball every time I see cherry or grape tomatoes on sale.  I could eat it with a slice of toasted french bread and be happy.  But my guys love it too so I usually make it a side salad with our meal.

      I’ve been in the mood for something sweet, something citrussy, something lemony.   As I was looking for ideas and going through my recipe files I found a recipe for Lemon Pound Cake.  Lemons in the springtime, it was just what I was looking for.  A really moist lemony pound cake dripping with glaze that would taste oh so good any time of day.  But there was one more thing that would make this cake even better.  Some sliced strawberries!
