  • Red Hot Wings

Posted at 1:55 pm by NativeNM, on August 2, 2011

This one is for Josh.  It’s his favorite and a frequent request for me to make.   Just a plate of wings and some ranch dressing is all it takes to make him happy.  Chef Paul Prudhomme is my hero for this seasoning mix which makes a great rub that you can taste in every bite.  I added a spicy sauce that will make your taste buds sing with some heat and a hint of sweetness.

This recipe makes 24 wings.  Line them up on a broiler pan.  Spray a little Pam or other cooking spray on the pan first so the wings won’t stick.

Next we want to mix the seasonings together.  They will be so tasty with this mix of  1 teaspoon Salt, 2 teaspoons Paprika, 1 teaspoon Cayenne, 1 teaspoon Garlic Powder, 1 teaspoon Onion Powder and 3/4 teaspoon ground White Pepper.  I put it in a container with a shaker lid so I can sprinkle it over the wings.

Generously shake that seasoning over the wings.  Make sure to get both sides.  I put these on for 40 minutes at 425 degrees.

While the wings are in the oven it’s time to make some sauce.   Start with 2 1/2 tablespoons unsalted butter, 1 teaspoon Wing Seasoning mix, 2 Tablespoons packed brown sugar,  1/3 cup Franks Red Hot Original Sauce, and 1/3 cup Franks Red Hot Wing Sauce.  I’ve tried several hot sauces and Franks is the best for wing sauce.

In a large non-stick pan melt the butter, add the seasoning mix, and brown sugar.  When those are all mixed together add the Franks sauces.

Simmer the sauce for 15 minutes on low until it thickens.  Leave the pan on the stove.  We’ll add the wings directly to the sauce.

Now that the wings are out of the oven we can put them in the sauce.

Just add the wings to the sauce and gently stir them until each wing is coated with sticky sauce.

    Enjoy!

    Wing Sauce

Heat oven to 425 degrees.  Layer wings on a broiler pan (coated with Pam cooking spray) and generously sprinkle seasoning mix on both sides. Drizzle wings with olive oil.  Cook in the oven for 40 minutes.  Coat wings with wing sauce and serve with Ranch or Bleu Cheese Dressing.

Seasoning Mix  (adapted from Paul Prudhommes Seasoned America)

    1 teaspoon Salt
    2 teaspoons Paprika
    1 teaspoon Cayenne Pepper
    1 teaspoon Garlic Powder
    1 teaspoon Onion Powder
    3/4 teaspoon ground White Pepper

    Mix all seasonings together.

    Wing Sauce

    2 1/2 tablespoons unsalted butter
    1 teaspoon Wing Seasoning mix
    2 tablespoons Brown Sugar
1/3 cup Franks Red Hot Original Sauce
1/3 cup Franks Red Hot Wings Sauce

In a large saucepan add butter, seasoning mix and brown sugar.  When butter has melted, add the Franks’s sauces and simmer on low for 15 minutes.  Set aside until Wings are ready.

      Don't mess with the Blues!

These wings were super easy to make and were also super tasty!!! I made these for someone else, as I am not a big wing fan, but these won me over! I kept a few out of the sauce and they were still very juicy and flavorful. You may want to add wet naps to the ingredient list! Thanks for sharing such a good recipe!
