Every year I look forward to the fruits of summer. It’s my favorite time of year and makes me feel like celebrating with a pie. I found this recipe on Pinterest, created by “Simple as That” and it looked amazing. I was intrigued with the almond crust, I had not tried to make a crust with almonds before. It was really really good. I was also fortunate to find some sweet and flavorful fruit to work with, adding sliced peaches and plums along with dark cherries, blackberries and raspberries. The crust tasted slightly like a pecan sandy cookie and complemented the sweet fruit filling. You can’t go wrong with this pie, try any fruit combination you wish. And don’t worry about the imperfections, it is rustic after all!

Bread pudding is one of my favorite things on earth. In fact, I’ve never met a bread pudding I didn’t like. I had my boys over for dinner and made this especially for them. They showed up about the time this came out of the oven and as soon as the pictures were taken it was devoured! Normally, I would take the time to make a loaf of brioche myself, but I found this great brioche bread at Sprouts that is so good! If you have a Sprouts store, you must try this bread. It’s already sliced and perfect for french toast and easy to cube for a pan of bread pudding. Adding just a hint of lemon juice to the sweetened whipped cream turned out to be a big hit. Another reason I chose this dessert is because this is my 300th post of An Inspired Cook. I thought this would be the perfect dessert to mark the occasion!

It’s berry season! For a couple weeks now the berries have been abundant and at a bargain. I always buy more than I need and put up several packages in the freezer for later. I’ve been craving a berry filled crumb cake to start my morning with that first cup of coffee. This cake turned out so good with it’s cream cheese and berry filling and topped with a streusel crumb topping. The only downside was that the topping virtually crumbled at every slice. I’m still picking up crumbs!
