      Happy Cinco de Mayo everyone!! Since it’s also Taco Tuesday, we are having some tasty tacos to celebrate. You’ll love these tacos with seasoned grilled chicken, street corn aka elote and fresh salsa folded into a flour tortilla for an explosion of flavors in every bite. Normally I would roast fresh corn on the grill but it’s not quite corn season so I opted for frozen roasted corn that you can get at Trader Joe’s. It’s the best roasted corn when you’re in a pinch. The corn is mixed with a tangy cream sauce with the flavors of lime, chile, garlic and Cotija cheese. It’s so delicious and makes a wonderful dip or side dish. The chicken is seasoned with a blend of red and green chile spices and a spritz of lime juice. Spoon some fresh salsa on top with a sprinkle of Cotija cheese and you will have one of the best tacos you’ve ever tasted!

    • Steak and Elotes Chimichanga

      Josh taped an episode of Food Paradise on The Travel Channel that showcased their top picks for Mexican food. He wasn’t kidding when he said they featured some of the most delectable dishes. This is the first of two that I just had to make.  A restaurant in Chicago “Carbon Live Fire Mexican” shared their Stelote burrito made primarily with steak and elotes aka Mexican Street Corn.  I have watched that episode more times than I can count and have finally gotten around to making this mouthwatering burrito.  Only I pan fried it so technically it’s a chimichanga.  Either way you will love it!  I grilled the corn along with the steak so they would have those fire roasted flavors. I removed the corn from the cob and added the dressing from my own “Mexican Street Corn” recipe. The steak seemed plain so I added some chimichurri sauce to the mix and wow did that enhance the flavors.  Some folks serve rice and beans . . . me . . I just need my guac and salsa to complete this meal!

      A few weeks ago I spent a few days with one of my oldest and dearest friends, Paula.  We’ve been friends since 7th grade but lost contact for a few years when we got married, had our families and lived so far apart.  We have since reconnected and found that old friends never lose touch, they just start up where they left off and keep on going.  And now we have new memories to build on.  During Paula’s visit we cooked some fun meals and ate out to taste some of the local favorites.  We didn’t go hungry, that’s for sure!  When we were chatting about food she mentioned her favorite roasted corn with a mayo based sauce that is out of this world. It sounded so scrumptious that I started looking up recipes.  I found several different variations and came up with a combination that sounded tempting.  Thanks Paula for the tip, my family may never go back to butter again!
